a All About Milk.
(t'ourtosy Metropolitan JJfe Insur
ance Company.)
Milk is our best all-round food,
the most perfect foad we have. It
Is one of our cheapest foods, too,
even at present prices. It is also
one of our mol popular food.
Without It the man at the soda
fountain, for instance, could hard
ly do business. He makes it the
chief ingredient in almost every
drink he serws. Those who do
no care for plain milk are often
fond n'f Ice cream, milk shake,
frosted chocolate, malted mi Ik,
egg nog. junket or milk Moups. And
grocers are now selling . number
of malted cocoa preparations which
require only (the addition of m'Ut
to make drinks that are delicious.
U i.s said that the vigor and suc
cess of a nation depend largely
upon the quantity of inlik it uses.
In the l.'nfted States we use sonic
thing like ."iJ.Oiio.oiHi.iiiMl miarts of
milk a yoj.r. This would make a
lake large enough to float all th.
navies of the world.
Three-quarters of this milk is
mad- into butter, cheese and other
nutritious miik products. The quar
ter that remains Is enough to sup
ply each Individual about half a
pint a day. The d:.lly amount nt
milk be.st stilled to any Individual
naturally varies with the amount
and kind of other foo:l he takw.
Speaking generally, how-vrr. the
safe plan is to .Irinic plenty of milk
and use it freely in cooking.

So do many other things, .some of
which affect the price of milk, such
as cattle feed, farm labor, and
j transportation. Hut even so, miln
i is cheap In comparison with other
j foodfc. There is more energy in 2
j cents worth of milk than in
j cents worth of meat or eggs or
; fish; you need these other foods,
' too, bat cutting down the milk hill
: is poor economy.
Milk should not h? regarded as
a beverge; it Is a food. Sip it slow
ly; get the flavor out of it. Don't
use it merely to quench thirst, and
! don't drink it down rapidly.
The gastric juice of the stomach
causes the milk to curdle the In
stant you swallow It, Nature know.
that fast eating may cause mdt
' gem ion. iShe compels the nursing
j baby to lake its milk slowly, wheth
' or it wants to or not.
; The body requires foods that con
: tain, in suitable quantities. iach of
', the follow ing elements: Proteins
, for body building and for the re
i pair of wear and tear. Fats and
i sugars or starches In supply heat
anil energy, vitamins to assi.-t
! growth and to ward off diseases,
i Mineral salts, such as iron, phos
j phonis and lime, which are need
ed in the blood, the bones, the
, teeth and the tissues I hi Ik and
rougham fibrous material to aid
in the elimination of waste. Prac
tic.lly all these elements, except
the last, are found in milk.
Milk is suitable for grown peo
1 pie. as well as for children.. Crown
I people can live for months on milk
'-alone, although a worker at hard
manual labor would have to drink
many quarts each day to keep up
his vitality ami repair the wear and
tear of his body. However, If th
grown up uses al least a -pint i
day. In combination with other
food, he is likely to secure an
efficient and w.dl-balanced ration.
While milk is a great help lo
men and women who want to k vp
strong, vigorous and youthful, it N
especially valu.blc for the sick.
One of the discoveries of our army
hospitals wax thai the liberal use
of milk hastened recovery of tlv
wounded.
For growing children milk is an
absolute necessity. Its proteins and
its rich supply of certain vitamins
promote crowth.
If a child getfl a quart or milk
a day with fresh vegetables, fruits,
some niei.f. ecus and cereals, he
will have the necessary variety to
give nit the nourishment and vita
mins he need.
