vegetables, the crimson
beets, the snowy potato, tho tempt
ing parsnips and carrots, the hearty
rulabaga, the spicy onion and all
the rest of the familiar tribe which
add so much of real food value and
tasty variety to our cool weather
menus? How could wc possibly plan
our dally three meals a day If It
were not for their sturdy dependa
bility? Most root vegetables are built
upon a woody structure called cellu
lose. Cellulose Is a carbohydrate of

per dish. Cut 4 pound ot salt pork
in bits and fry brown, cover wllh
boiling water nniS cook one hour.
Add three or four parsnips pared,
and quartered lengthwise wllh ad
ditional hot water as necessary.
Simmer ten minutes,, then add two
or threo pared potatoes cut In
pieces with seasoning 'lo tasle.
When Lite potatoes are done add a
cup of rich milk and a tablespoon
ful ot butter. Thicken with a table
spoonful 0f flour rubbed to a paste
wllli two lablespoonfuls of water.
