Two cups chopped meat, 2 table-1
spoons -butter, 3 tablespoons flour,
1 teaspoons salt, 1 teaspoon diced
onion. 1 teaspoon chopped purs
ley. 1 ? cups milk, stock or water,
2 cups buttered crumbs.
Make a brown snuoo of the but",
ter. salt, pepper, flour, onion, pars
ley and liquid by browning butt or
before adding remaining ingredi
ents. Mix with tho meat, liutter
the crumbs, Miy mixing with two
tablespoons ' melted butter, one
foiirih teaspoon salt and a Utile
pepper, and place about one-third
in the bottom of a greased baking
dih. Add the meat mixtur', and
cover the top with the remainder
of the crumbs. Make in the oven

crumbs browned.

Mix mnshed, seasoned potatoes
yolks of 2 eggs and cayenne and I
beat ur.til smooth, then cool. Chop
the ham and mix with the third
egg yolk, heat and cool. Make a
small ball of ham and enclose in
a larger one of potato. Dip in
flour, beaten egg, roll in crumbs
and bake In oven. This Is de
licious served with egg sauce.
