chicken and seasonings. Spread

until cold. Divide Into Hi portion:,
shape into cutlets on h boar. I

crumbs, and eg hihI crumb each
cutlet. Fry golden brown in deep
hot fa I or bake golden browu in a
lint oven. Serve with mushroom
sauce.

makes it much easier to handle th':

after cooking.
Mushroom Sauce
Four tahlespoonn butter or snh
stilule. 1 cup peeled chopped mush
rooms, 4 (HhlespootiH flour. I'.ir cups
slock, teaspoon sail. 16 paprika,
'-j cup light cream, I teaspoon of
lemon juice.
Melt the butler or substitute and
cook the mushrooms In it for live
minuies. Add the flour, stir until
smooth, then slowly add Ihe stock.
Urine to boiling point, atirrhig con
stantly, season, simmer five min
utes: iusl before serving, add the
cream and lemon juice. The stock
may he made from the chicken i
bones and trimmings and Ihn peel-
iugs and skins of the mushrooms
cooked slowly in water. i
