Mr. Mason declare that Ills
method of planting and harvesting
three crops a year w il conquer the
problem of noII erosion, which, ac
cording to government figure, Ik
costing America one-sixteenth of
an Inch of her choicest soil every
year and threatens to wipe out
t he very ba.-as of American na
tional life within a century. Soil
erosion is due to heavy rains which
fall upon open plowed -up fields
and carries away the soil. Hy
planting three crop a year, the
farmer hinds together this soil,
which is not swept away hy wash
outs. "Artificial drying ha displaced
unt ural drying: In all in e arts." Mr.
Mason said. "Agnculture Is prac
tically atone In continuing to rely
on th'e ordinary sunshine io dry
its produc:s. No successful man
nowadays puts brine In the sun to
get salt. Nor docs any successful
enterprise try to dry hi Ick In the
sun preparatory to burning If It
expects a profitable- kiln. All ma
terial used In the manufacture of
Portland cement Is dried artificial,
ly. Look where you will, natural
drying has been abandoned In mod
ern life.
"Not only does artificial drying
of crops muke( them more valuable
but it enables a new view of the
entire subject of agriculture. It
enables the neason to begin earlier
in the year and to go later. Thus,
we make excellent hay In May, and
on one occasion, til least, 1 have
made a crop of alfalfa worth as
much us the cm ii crop of my neigh
bor before my neighbor's corn crop
was planted a I ail. At the other
end of the pea hoi), row-peas may
be harvested atxl cured In Novem
ber ut a time when all conventional
farming has long shut up shop for
the year.-'

A little sugar nukes bitter chocolate mellow and tasteful.
If cereal is cooked with a dash of sugar, an entirely "new"
flavor develops. This is the delicate flavor of the cereal that th
sugar has brought up so that it can be tasted.
Add a dash of suga. to beets, peas, suing beans, lima beans,
corn, carrots, parsnips, sweet potatoes, squash, oniuns, tomatoes,
cucumbers, spinach, asparagus, beet greens and celery while they
are cooking (preferably in little water). You will find dclicioua
flavors rarely tasted in vegetables before. These are the natural
delicate vegetable flavors developed by the sugar. Use sugar
flavor to improve the diet and health of the nation. Most foods
are more delicious aud nourishing with sugar. The Sugar Institute.

If a dash of sugar is added to unbeaten egg-:
whites, and the two beaten together, the meringue
will be lighter than if the egg is beaten before
the sugar is added.
