Tbc triumph was an institution croaloil to satisfy tho

I more than ever. The most interesting lea lure of
the process is pasteurizing the cream hv strictly
Sanitary Methods. The cream, after he'ing sepa
rated from the milk, is tested for buttor-fat bv
strictly scientific apparatus, mul is then placed iii
the Pasteurizer, which is a great aluminum tank con
taining revolving aluminum coils.
After the creain has been ldaced in the Pasteur
izer, which has previously been sterilized, live steam
is turned into the coils, which revolves, thoroughlv
, agitating the cream, until a temperature is attained
I to ripen the creain before churning. The steam is
then turned off, and refrigerating brine turned into
the coils, reducing the cream to the exact tempera
ture required for churning. This assures longer
keeping qualities and still further adds to the whole
someness and uniformitv of the product.
IT IS A PROCESS Which undoubtedly will be re
quired by the PURE FOOD LAWS in this country
eventually, as it is now in many parts of Europe
where dairying is the chief industry.
After churning the butter is placed in Told Storago
and each package is weighed separately, wrapped,
and placed in cold rooms until needed. The cold
storage facilities of this plant cannot be excelled, as
