DumboyNational Dish of Liberia
, WASHiNh'ro.v, i). c, Aug. ov
Diimboy, the national dish of Liberia,
is one 'of the world' gastronomic
wonders; if allowed to fetnnd long
after being prepared lor the table it
becomes very hard, broken rjieces of
it being n favorite kind of shot for
use in the long muzzle-loading gunrf
of the natives. A casing gf diimboy
l Alo used to stiffen the leather
sheaths of the native swords ami
knives, according to (I. K. Collins, in
4i (ommunlcatiou to Ihe National
Geographic Mieicly at Washington;
I). ('.
"To attempt the description of
some novel food is like attempting to
dencribe n laudscnpe," writes Mr.
Collii-.. "Tho constituent parts may
he described nud ihe manner in which
they are combined, but it require,
something more llimi accurate de
scription lo reproduce the sensation
of the original. Tliu principal ingre
dient of diimboy i cassava, or Vns
xudii,' as it is called in Liberia. The
edible roots of this plant nre Ihe
sourc of tapioco anil some fornis of
sago. To prepare the roots (r diim
boy they are peeled, boiled and all
fibers from the center remoi'd. The
cooked roots nre Ihcu placed in a
large wooden mortar nnd beaten with
i In 1:1 v pestle. This beating requires
cntiMilcrable skill mid experience. In
the hands of a police ihe result is
lumpy und inedible.
"The hen ling requires nbout three
quarter of mi hour, und is hard
work. As the beaten muss becomes
homogeneous the xstlo produces u
loud crack each time it is drawn
from tliu mortar. These sharp re
ports can he heard long distances
through llie forct, and are very wel
come sounds at Ihe cud of u day's
journey. When tlio diimboy reaches
lliii stage ihe operator may rest
without injury to the protliict; hut,
once the heating is curried past (his
point, it mini he rapidly completed
and Ihe diimhoy cnlen nt once. The
natives say it is actually dangerous
to cat diimboy that has stoo'l for
more than 11 i'civ iiiiiuilfg niter it is

red millions of our own people to o
howl, from which all the partakers
cat. If divided, the eustomnrv por
tion for each person is a piece nbout
the size nnd shajio of an ordinary
loaf of bread. A soup which has
been prepared while the diimhoy was
being beaten is now poured into each
bowl. There is great variety in this
soup, which imparts mo-t of the
taste to the dish. There is always
a slock of nimie form of meat. This
may he ellher chicken, deer, fish,
monkey or even canned beef. To
this nre added as many vegetables
as can be obtained.
"As soon ns the soup is added the
diimboy is ready to be eaten; nnd,
while the ingredients nre somewhat
bizarre, the method of eating the
dish hlrikes ihe iruveler as even more
startling. The mass of diimboy,
which vun best he described as a
sticky dough, will adhere iimtantly to
anything dry, hut is readily cut with
a wooden ssiou if the spoon is kept
moist with soup. An incredibly Jarge
jiiece is cut off with tho moistened
spoon) taken up with a quantity of
soup and swallowed whole. No one
thinks of chewing it, nud it is cus
tomary to caution tlio novice by
tales of the frightful operation nec
essary lo t,cjiarate the jaws once (lie
teeth nre buried in tlio sticky muss.
"As might bo expected, few Euro
peans like diimhoy on find acquaint
ance; and, with some, the initial dis
taste prevents further experiments.
If n second or third attempt is made,
however, and the dish has been prop
erly prepared, the habit is iiMinlh
formed nnd before long every night
spent in the hush without a meal of
diimboy i counted a privation.
"Among the white residents of Li
beria, fondness for this dish
amounts almost lo u cult. It is re
garded ns a sort of guaranty (hut
one's tenderfoot days are over."
