Deviled Meats.
Use the trimmings of cold boiled
hum or tongue. There should be one-
quarter fat, in the hnm. Chop the
meat or grind It, for It must be very
Qne, then rub to a paste. Mako a sea
soning of one level tablespoonful of
sugar, a level teaspoon of mustard,
and a few grains of cayenne, not using
over a saltspoon. Mix well together,
then add one cup of hot vinegar slow
ly to make the mixture smooth. Mix
two cups of prepared meat and dress
ing thoroughly, then pack In a bowl or
small Jars. Use for a relish or for
sandwiches.
Protection Atralnat Poison.
Probably the most Ingenious device
Invented to prevent the taking of poi
son in mistake for medicine Is a bot
tle which has been recently devised by
a French Inventor, which Is supplied
with a lock and key, so that there
could be no poHsIblllty of error. The
cork Is on a spring secured to the neck
of the bottle, and when pressed into
place Is secured automatically , by a
spring-like hasp. In order to release
the cork It. Is necessary to mako use
of a key which is also secured to the
neck of the bottle. 1
Lady Baltimore Cake.
One cup of butter, two cups of su
gar, one cup of sweet milk, whites of
six egs, two level teaspoonfuls of bak
ing powder, sifted with three and one
half cups of flour; one teaspoonful of
rose water. Bake in layers and put
together with the following mixture:
Boll three cups of granulated sugar
until it threads and pour It over the
stiffly beaten whites of three eggs.
Beat until thick enough to spread and
add a cup of chopped raisins, one of
chopped pecans and five figs, cut Into
thin strips.
Date Maffins.
Stir, together three coffee cupfuls of
flour, three teaspoonfuls of yeaat pow
der and half a teaspoonful of salt, sift
Into a bowl, with one and one-balf cof
fee cupfuls of milk ; beat In the yolks
of two well-beaten eggs ; beat this
gradually as you sift In the flour ; add
one tablespoonful of melted butter;
when smooth beat into it three-fourths
of a coffee cupful of chopped floured
dates, and lastly force In the stiffened
whites; put in warmed greased gem
pans and make twenty-five minutes.
Cheese Finger),
The cheese fingers are quickly made
and very savory. Mix one cupful of
flour, quarter teaspoonful of salt, a
dash of cayenne, a half teaspoonful of
baking powder ; rub Into 'this two ta-
blespoonfuls of butter, add a half cup
ful of grated cheese, and mix to a
dough with ice water. Roll out in a
thin sheet, cut in half-inch strips with
a jagging iron and bake pale brown in
a moderate oven.
Egg Rolls.
Sift two cups of flour with four lev
el teadpoonfuls of baking powder and
a saltspoonful of salt Rub In a level
tablespoonful of lard and two level
tablespoonfuls of butter. Add to the
beaten yolk of one egg one cup of milk.
Roll half an 'inch thick, cut In squares
and bake In a quick oven. Serve hot.
Meat-Halls.
Allow to each pound of finely ground
beef three-fourths of a cupful (coffee)
of grated bread crumbs, one egg, salt
spoonful of salt, tablespoonful of
minced parsley, half a saltspoonful of
white pepper; beat in a bowl and drop
from spoon into the boiling fat
EtTgrleaa Cake.
Cream a half-cup of butter with one
and one-half cups of sugar, add a cup
of sour milk, a level teaspoonful of
soda, three level cups of flour, a half
teaspoonful each of cinnamon and
mace and a cup of raisins, seeded,
chopped and floured. This cake Is ex
cellent to have during the season when
eggs are scarce, and if carefully made
is very good. . ,

Coffee Cake.
Cream a cup of sugar and a half
cup of butter; add three well-beaten
eggs, a half-cup of strong coffee, two
cups of flour sifted twice with two
teaspoonfuls of ' baking powder," one
teaspoonful of cinnamon, a pinch of
cloves and lastly a cup each of seeded
raisins, stemmed currants and chopped
nuts, dredged with flour. . ..
Corn Bread.
Sift one cup of flour, two cups of
corn meal, one-half level teaspoon of
salt, four level teaspoons of baking
powder and a rounding tablespoon of
sugar. Add the beaten yolks of two
eggs and one cup of milk, one table
spoon of melted butter, and, last, the
whites of two eggs beaten stiff.
