the entire contents Into the soup kettle.
Add one bay leaf, a blade of m nee, a
half-teaspoonful of salt, a dozen pep
percorns and- a pint of boiling water.
Simmer slowly for fifteen minutes,
working frequently with a wooden
beetle or wire potato masher that the
peas mny be well broken. Press
through a sieve, worklug It to get all
the pulp possible ; then return to the
Are. In a double boiler prepare a thin
sauce with one large tableHpoonful of
butter, two scant tablcspoonfuls of
flour and one pint of milk. With this
gradually blend the pea pulp, add more
seasoning If necessary, and simmer for
ten minutes longer.

Steamed Apple.
A delicious and simple way to pre
pare winter npples : Peel, quarter and
core six or eight apples; steam or boil
until about half cooked; take from the
fire and let cool ; make a syrup of two
cups of sugar and half a cup of water ;
drop the apples Into the boiling syrup
for a few minutes, or until they become
clear; let cool and serve with cream.

Liquid Glue.
Take three parts (by weight) of gum
shellac and one part of India rubber.
Dissolve In sepnrate vessels in ether
(free from alcohol), applying a gentle
heat When tooth are entirely dissolved
mix them and put them In a tightly
corked bottle. This variety of glue Is
known as marine glue. It resists the
action of hot and cold water and tbe
majority of hot alkalis and acids.
Virginia Sweet Potatoes.
Boll the sweet potatoes for twenty
minutes, remove from the Are, peel and
cut them Into slices. Put a layer of
sweet potatoes, then cover with sugar
and cinnamon j continue this imtll the
dish Is full, making the last layer of
sugar. Then pour over the top a tea
cupful of hot water In which has been
melted a tablespoonful of butter. Bake
in the oven until brown.
Corn Floor Cake.
Two ounces of flour, quarter pound
corn flour, half pound loaf sugar, four
ounces butter, one dessert spoonful bak
ing powder, four eggs. Beat the butter
and sugar to a cream, then add the eggs
well beaten, one at a time, add the
flour, baking powder and corn flour;
beat five minutes; flavor with almond
or lemon; pour Into a buttered tin and
buk'e for one hour.
Baked Apple Butter.
Delicious. Pare tart apples, quarter,
core and cook them as for plain apple
sauce. When cooked sweeten to taste
and to a gallon of sauce add a cupful
of boiled cider. Place the sauce In a
crock In a moderate ovenr and bake un
covered for several hours, or until It
has thickened sufficiently. Stir occasionally.
Marshmallow Confection,
One-half pound of English walnuts,
chopped fine and added to a pound of
marshmallows cut up. Mix these to
gether. Take a pint of cream a,nd whip
It until stiff. Stir into It the nuts and
marshmallows, also a quarter of a cup
of candied cherries chopped fine. Flavor
with a few drops of vanilla. Set on the
ice an hour or two before serving.
' White Cake.
One-quarter cup of butter, one cup of
sugar, one-half cup of sweet milk, one
and one-half cups of flour, sifted with
one teaspoonful of baking powder, the
whites of two eggs. Cream the butter
and sugar, add the milk, flour and bak
ing powder; lastly, beat the eggs to a
stiff froth and fold Into the batter.
Bake In two tins. ,
South Chatham Lady Flngrera,
Beat the yolks of three eggs until
thick. Gradually beat In one-third of
a cup of sugar and a grating of lemon
rind. Then cut and fold In a scant
three-fourths of a cup of flour and, the
white of one egg, beaten dry. Shape
with a pastry bag and plain tube on
waxed paper. Bake about ten minutes.
