with flue white sugar between each
layer. They will keep for years.

Chop the peucb.es Into a bowl and
add a generous quantity of sugar;
then set awuy until a thick syrup has
leen drawn. To this add beaten eggs
In tho proportion of two egg to a pint
at fruit, preserving the whites of two
agga for meringue. Add half the quan
tity of milk there is of fruit, and two
rolled crackers for each pint of the
mixture. Mix, pour Into an earthen
aish ami slip Into a quick oven. Rap
idly beat the whites with a heaping
toaspoonf ul of soft white sugar to
Bach, put at once oa pudding and re
turn to oven with the meringue la a
delicate brown. Serve cold.
PreaerTed Melon Rind.
Peel tho rind and cut It Into squares
or lengths of uniform size, lay In salt
ed water for two hours, then drain and
cover with cold water, changing this
every two hours for seven hours. Drain,
cover with water to which two table
spoonfuls of alum have been added and
stew until tender, then drain and lay
again la cold water. Doll to a thick
sirup sugar and water and when tiie
boiling point Is first reached lay in the
rind and cook for fifteen minutes ; then
remove It and pack in Jars, add a little
lemon Juice and ginger root to the
sirup, and when thick fill the Jars.

Salman Loaf.'
Take salmon, remove the bones and
break Into flakes with a silver fork.
Add four tahleapoonfuls of melted but
ter, one cupful of breadcrumbs, one
half tepoonful of salt and four well
beaten eggs. Put In a well-greani.'d
pudding dish and steam for one hour.
Thla may be served hot on a platter
with rlced potatoes and a cream gravy,
or sliced cold with a garnishing of let
tuce or parsley and lemon.
Apple Pandowdy.
Butter a baking dish and put in to
it a layer of peeled and sliced apples;
then butter, sugar and cinnamon to
taste; add another layer of apples, with
butter, sugar and spice, and a small
cupful of warm water. Make a rich
biscuit crust, cut with small biscuit
cutter, and place upon the apples, uot
too closely; make slowly until well
done, and serve either with lemon
sauce or cream and sugar.
Pineapple Pie.
Peel and take out the core and little
ends of one pineapple. Grate It or chip
Into very fine pieces. Mix together and
beat one cupful of sugar and one-half
cupful of butter until creamed. Add
the beaten yolks of five eggs, then the
pineapple and one cupful of sweet
cream, and lastly add the beaten whites
of the eggs, whipped in theie mix
ture very lightly. Use only one pie
crust, the under one.
Egg Salad.
Arrange a head of lettuce on a plat
ter; cut six hard-boiled eggs in half
crosswise ; take out the yolks and pound
them fine; mix with one and a half
tablespoonfuls of olive oil, one even
teaspoonful of mustard, pepper and
salt, and enough vinegar to thin suffi
ciently. Cut a little of the end of
each half egg to make it stand, arrange
among the lettuces leaves and fill with
dressing.
Pickled White Onion.
Lay the onions In very strong brine
for five days, then drain and cover with
boiling hot brine and boil for five min
utes. Drain and throw into fresh cold
water and leave for several hours.
Drain, pack into Jars and fill these to
overflowing with scalding, spiced vine
gar. Do not use under six weeks.
Cider Cake.
One cup of cider, one cup of but
ter, three eggs, two cups of sugar, one
teaspoonful of soda dissolved in hot
water, one teaspoonful of allspice, rai
sins and citron If desired, well dredged
with flour for good batter. Bake In a
loaf tin in a steady oven.
Improved Cake Pan.
The cake pan with the removable
bottom has been further Improved by
the addition of a handle in the shape
of a hook. By means of this the tin
can be easily removed from the oven,
Instead of eluding all efforts, as heretofore.
