Jamaica Lime Pie

perfect ending to a relaxing nig ht. T hose w ho w ant
to add a tou ch of the tang y to their C hristm astim e
dessert table shou ld consider the follow ing recipe
for “Jam aica L im e Pie” from H elen W illinsk y’s
“Jerk from Jam aica” (Ten Speed Press).
Jam aica L im e Pie
Serves 6
Fillin g
4 larg e eg g yolk s
1 larg e eg g w hite
1 14-ou nce can sw eetened condensed m ilk
1/2 cu p fresh lim e ju ice
1/4 teaspoon salt
1 partially bak ed 9-inch pie cru st, chilled
M erin gu e
3 larg e eg g w hites
1/2 teaspoon cream of tartar
6 tablespoons su g ar
To m ak e the filling : In a m ediu m bow l, beat the
eg g yolk s and eg g w hite u ntil they are very thick
and lem on-colored. Stir in the condensed m ilk ,
lim e ju ice and salt u ntil w ell blended. Pou r into the
chilled pie shell. R efrig erate for several hou rs to
allow the filling to set.
Shortly before serving , m ak e the m ering u e.
Preheat the oven to 425 F. In a larg e bow l, beat the
3 eg g w hites w ith the cream of tartar u ntil they
form soft peak s. G radu ally beat in the su g ar, and
continu e beating u ntil it is dissolved. By then the
m ering u e shou ld be stiff and g lossy. Spread over the
filling , being su re to seal the edg es w ell so that the
m ering u e w ill not shrink .
