Meat Department
A total of 52 permits have been is-
sued by Charles Taylor to Hermiston
residents and business houses for
connection to the new city sewer. A
majority of the ditches have been dug
by F. P. Sargent Construction Co. ai-
though some citizens are digging their
own ditches. The city council has re-
cently passed an ordinance calling for
connections within 90 days unless for
“good and sufficient” reasons some
extension of time is granted.
It is hoped that many more connect-
ions will be made in the near future
in order to assure efficient operation
of the sewage disposal plant.

ers to use “B”, “C”. “E” and “R”
gasoline coupons beyond the fixed per
iod for which they were issued and
until renewals are obtained were an
nounced this week by the district
OPA.
This is the effect of an amendment
to the gasoline rationing regulations
substituting “earliest renewal dates”
in the case of supplemental, afficial,
fleet and non-highway rations for
“expiration dates”, previously used.
The amendment also provides for
issuing all “B” ration books for a
fixed 3-months period, rather than on
a “time-tailored” basis. Individual
rations will be tailored by tearing out
coupons. In the Eastern shortage
area, “B” books will continue to be is
sued for 4 months.

Clarence A. Kennison, Jr., son of
Mr. and Mrs. C. A. Kennison who is
stationed at Sheepshead Bay. Brook-
lyn. N. Y., has been asigned to the
Deck Training Department for ad
vanee instruction in becoming a mer
chant seaman to deliver cargo to the
battlefronts of the world.
Clarence is a graduate of Hermis-
ton high school where he was active
in football and band. Prior to his en-
trance into the armed forces he was |
employed by the War Man Power
Commission as Radio Trainee.

One thing is certain: We can’t “keep
going" at our best speed unless we
keep our summertime meals hearty
and really nutritious Easiest way to
do this is to include at least one hot
dish with all three meals of the day.
And they don't have to be the kind
that require hours and hours in
preparation. Here are some sugges
tions for "quickie" hot dishes that
will satisfy robust appetites.

cooked, chopped meat, and add left
over gravy to fill hole to top Place

toes are golden brown and gravy
starts bubbling Serve piping hot.
Leftovers in grand disguise.
Combine equal
portions ground meat and dry bread
crumbs. Add salt, pepper, grated
onion, a bit of mustard, and a
chopped tomato. Add a beaten egg
and beat the meat as you would
cake batter until all ingredients are
completely blended. Form into meat
balls the size of a walnut and brown
quickly in hot shortening. Then add
just enough water to cover bottom
of the pan. cover pan and steam for
15 minutes. Thicken drippings in
the pan and serve with meat balls
over steamed rice or toast.
THIMBLE MEAT DALLS
-Have steak cut very
thin Spread steak with a thick layer
of seasoned, breadcrumb stuffing.
Roll up steak, jelly-roll style and
tie or skewer. Brown steak roll in
hot shortening, then add just enough
water to create a steam and cover
and steam for about 25 minutes, or
until steak is tender. Make gravy
from drippings. It makes a little
steak really go around.
