At this time you have your Christ
mas dinner plans well in hand and
are on a tear to put them into exe
cution. Some one has said that the
planning of Christmas menus is like
trimming the tree, you bring out
your choice and favorite recipes and
hang them on the prominent branch
es of your menus. And so it is. for
every homemaker chooses the dishes
that she knows will add the sparkle
to the holiday feast, long anticipa
ted by her brood.
But the Christmas dinner is usu
ally just the beginning of a week of
festivity. This is the season that
just does something to you and
makes you seek out old friends, old
neighbors, the almost-forgotten rel
ative. Indeed, it is the season of
happy hearts and those who make
the most of it are the very ones who
reap the most enjoyment.
Your home-for-the holidays mem
ber of the family will appreciate the
festivities that require the least
time in preparation. If you budget
your time for household tasks and
food preparation you will have the
time for the many things you long
to do during these days between.
Have in mind dishes that are quick
ly put together, dishes that can be
prepared ahead of time without loss
of looks or flavor. Molded salads,
hot cream soups, pressed chicken or
veal and pork molds, quick hot
breads with a favorite preserve,
home canned fruits as dessert and
a well-filled cokie jar are all time
saving and yet filling and appetiz
ing too.
One of our favorites which can be
used for luncheon, dinner or a fire
side supper is oyster stew and this
is our recipe for it.
Oyster Stew.
2 tablespoons butter
Large pinch paprika
Dash of tabasco sauce
Dash of Worcestershire sauce
Salt and pepper to taste
1 pint oysters
2 cups cream
2 cups rich milk
Put butter, paprika, tabasco,
Worcestershire, salt, pepper and
oysters in top of double boiler. Heat
over boiling water until edges of
oysters begin to curl. Then add
milk and cream. When It is piping
hot, ladle into warm soup bowls In
to which you have put a portion of
butter. Serve at once, with salted
oyster crackers.
