When Paeteurization Fail»
The value of the pasteurization
process as applied to milk has been
questioned from time to time and It
is undoubtedly true that for one rea
son or another, the operation does not
always seem to be entirely satisfac
tory In the results. Somewhat recent
ly It has been discovered that milk
'left uncooled between milking and
pasteurization for a period of about
four hours contains a large percent
age of organisms that resist the pas
teurizing process, while milk cooled
and held to below 60 degrees Fahren
heit until It reaches the pasteurizer

. resisting organisms.

Sun Doge
“Sun dogs" are mock suns, appear
ing In the form of a bright light near
the sun, usually tinged with the pris
matic colors and sometimes having a
luminous train. Two or more are
generally seen at the same time In
connection with solar halos. They are
popularly called “sun dogs” because
they are attendent on or followers of
the sun. They are really optical Illu
sions and are known scientifically as
"parhelia." The Images are due to
the prismatic reflection of the rays of
light through Ice crystals formed in
the upper atmosphere.
