Mrs. A ndrew A. B raun w as born in
th e province of O ntario. C anada, in
1865, w here she lived u n til 1891, when
she moved to C incinnati, Ohio, w here
she lived u n til 1914.

sh e moved w ith h er fam ily to P lea s­
a n t Home, Oregon, w here she lived
u n til she passed aw ay on W ednesday,
May 21, at th e fam ily home. F u n eral
services w ere held ou S atu rd ay at the
P le a sa n t Home M ethodist church. The
serm on w as by th e Rev. W. R. Reece
of th e New C hristian ch u rch of P o rt­
land, of w hich she w as a m em ber. The

C H IC K E N CROQUETTES
few grains pepper
5 j tablespoon chopped parsley 2.H cups chopped chicken
1 teaspoon lemon juice
1 cup thick white sauce
teaspoon salt
Mix seasonings with chicken; add thick white sauce until
mixture will hold together. Form into small croquettes
and set aside to cool. Beat one egg with 2 tablespoons
milk. Roll croquettes in dry bread crumbs, then in egg
mixture and then in the dry bread crumbs, covering well.
Fry in deep Amaixo hot enough to brown a piece of bread
in 40 seconds (385* F.). Drain well on unglazed paper
and serve garnished with parsley on hot platter.
Makes 14 croquettes.
Thick W hite Sauce
2 tablespoons Amaixo
few grains peppec
7i cup flour or
cup corn starch 1 cup scalded milk
J-a teaspoon salt
P ut Amaixo into top of double boiler. Add flour and sea
sonings and stir until thoroughly blended. Cook over flame
