The m iero-organism s th a t cause sourness in milk are th u s heated u n til they all die. Milk bread will be a little yellow b u t its flav o r is b e tte r and it is more n u tritio u s th an w ater bread. W ater may be used in ­ stead of milk, however, and good bread ean be made w ith it. ‘ ‘ Sugar is a good yeast food. A little added to the bread does not a ffe e t the flavor of the bread b u t does quieken th e action o f the y east. S alt is used for flavor.
