Christmas Kitchen

SEAFOOD SOUFLE

Home Economics Teacher, Heppner High School
8 slices bread 1 cup mayonnaise
2 cups tuna, crab, shrimp or 4 eggs, beaten
salmon 2 cups milk
One-third cup onion, chopped 1 can mushroom soup
1 cup celery, chopped Vi I cup cheese, grated
Lay half of the bread on the bottom of a baking dish. Spread
on seafood mixture of tuna, onion, celery and mayonnaise,
Pour mixture of beaten eggs and milk over the top, cover
with mushroom soup.
Refrigerate overnight.
Bake for one hour at 325 degrees. Sprinkle with cheese and
return to the oven for S minutes.
Yield: 8 servings.
Note: I generally use 2 cans of tuna and 10 - 12 slices of
bread for a 9 x 13 pan.
The casserole la a favorite of mine for year-round
entertaining because it can be quickly put together from
easily obtainable materials and made well ahead of time. I
often serve a green or fruit salad, a vegetable and a light
dessert to complete the meal.
CRANBERRY ORANGE MOLD

1 cup fresh or frozen cranberries (ground)
2 tablespoons sugar
2 medium oranges, peeled, ground
1 small can crushed pineapple canned in its own juice
1 cup chopped celery
1 envelope unfavored gelatin
2 cups plus 2 tablespoons cranberry Juice cocktail (low
calorie or regular)
Grind cranberries and oranges. Add drained pineapple.
Add sugar and stir. Set aside.
In saucepan soften gelatin in 1 cup of the cranberry juice
cocktail; cook and stir over low heat until gelatin Is
dissolved. Cool.
Drain liquid from fruits. Add enough cranberry Juice
cocktail to measure 1 cup plus 2 tablespoons of liquid. Stir
into gelatin and chill until partially set. Fold fruits and celery
into partially set gelatin mixture; pour into 4-cup mold which
has been sprayed with a non-stick spray. Chill several hours
until firm. Unmold to serve.
Make? servings.
This recipe is lower in calories than regular gelatin salads
and higher In nutrition. It makes a refreshing salad with
Christmas dinner.

Helen Curran Green
PORTLAND - Helen Curran
Green of Portland, a former
Heppner resident, died at a
Portland hospital December
10. 1982, at the age of 77.
She was born at The Dalles
to Mike and Agnes L. Curran.
The family moved to Heppner.
where her father organized
the Heppner Fire Depart
ment, In 1923 she moved to Port
land and attended the St.
Vincent Hospital School of
Nursing. She graduated in
1926. and worked at St. Vin
cent Hospital and Medical
Center from 1926 to 1963. with
the exception of several years
during the Depression. In the
1930s, she lived for a time In
Heppner. where she worked in
her mother's dress shop.
In 1967 she moved to Olym
pla, Wash., and returned to
Portland In 19ii0.
Mrs. Green was a member
of St. Peters' Hospital Auxil
iary in Olympia and past
president of the Anchoret tes, a
group attached to the Olympia
Yacht Club.
At her request, no funeral
services were held.
Survivors include her hus
band. Edward J. Green ; and a
sister, Marie Reno of Los
Angeles. Calif.
Leslie It. 'Doc' Babb
HEPPNER - Leslie R.
"Doc" Babb. 87. of Heppner,
died December 3, 1982, at
University Health Sciences
Hospital in Portland.
He was born September 9,
1895 In Wichita. Kansas. He
came to Oregon in 1910. He
lived in Portland before mov
ing to Heppner in 1955. In 1956,
he married Edith Woodworth.
Mr, Babb was a 30-year
veteran of the Portland Fire
Bureau, a 1923 graduate of the
Western States Chiropractic
College, a Master Mason, a
member of the York Rite and
the Al Kadar Shrine and a past
master of (he Rhea Crepk
Grange.
Private services were held
in Washougal. Wash. Memor
ial Services were held by
Heppner Lodge AF & AM No,
69.
He was preceded in dea th by
a son. Wilbur Babb.
Survivors Include his wife,
Edith Babb; a stepson. K H
Woodworth; and numerous
grandchildren.
Contributions, for those who
wish, may be made to the
Oregon Kidney Association or
the Shrincrs Hospital for
Crippled Children.

died December 16 at Modeli
go, County Waterford, Ire
land. Funeral services were
held December 19 in Modeligo,
with burial following there.
Recitation of the Rosary and
Chanting the Office of the
Dead will begin at 7:30 p.m.,
Monday, Dec. 27, at St. Pat
ricks Catholic Church. A
memorial mass will be said
Tuesday, Dec. 28, at 11 a.m.
