Christmas Kitchen A gift of recipes

CHOCOLATE PEANUT BUTTER BALLS &
CHOCO-CHERRY BALLS

Chocolate Peanut Butter Balls
Mix and form into balls:
2 cups powdered sugar
1 cup peanut butter
cup butter or margarine
Refrigerate.
Melt 12 oz. chocolate chips over double boiler or carefully
in microwave oven. Add a scant tablespoon of vegetable oil
and Mi block of paraffin wax. Melt and mix together.
Dip cold peanut butter balls into chocolate mixture using
tongs or a tooth pick. Put dipped balls on waxed paper to
harden chocolate covering. Store in a cool, dry place up to six
weeks.
May use a little less parafin.
First variation : using same chocolate mixture add favorite
nuts and or raisins and drop by teaspoon onto waxed paper to
cool.
Second variation: Use other candy filling recipes and
shape into squares, rectangles, etc.
Choco-Cherry Balls
1 cup margarine or butter cup chopped marischino
1 cup powdered sugar cherries
1 tsp. vanilla cup shredded coconut
1 tsp. rum flavoring 2 c. uncooked rolled oats
Mix all ingredients together, form into balls and refriger
ate. Roll in nuts or dip in chocolate.
BUTTER CRUNCH TOFFEE

1 cup butter or margarine 1 cup nuts
1 one third cup sugar 4 squares sweet chocolate
1 tablespoon corn syrup
Cook butter, sugar and syrup until 300 degrees. Pour 4 cup
chopped nuts into a buttered 13 x 9 in. pan and quickly spread
butter mixture over nuts with spatula. Remove from pan and
place on waxed paper.
Apread top with melted chocolate and sprinkle with finely
chopped nuts. When chocolate hardens, turn over and spread
other side with chocolate and sprinkle remaining nuts.
Break into pieces.
Makes about V lbs. of candy.
PEANUT BARS

5 eggs (separated) 1 teaspoon vanilla
1 cup cake flour (No shortening or leavening is
Vt teaspoon salt used (
Beat egg whites until stiff peaks form. Gradually add the
sugar and flavoring.
Beat egg yolks until light in color, fold into whites and
sugar. Gradually fold in the flour and salt.
Put in a greased and floured 9 x 13 pan. Bake at 325 degrees
for 25 minutes or until done. Invert pan on rack to cool.
"When cold, cut in desired sized pieces, frost all around with
a powdered sugar icing, made with powdered sugar and
enough milk to make it the right consistency to spread nicely.
Roll each piece in ground peanuts as soon as frosted. Lay
on cookie sheets until firm.
NUT ROCA
From Kathy Morter
4-H Leader
1 cup butter or margarine
1 and one-third cup sugar
3 Tablespoons water
1 cup chopped nuts or almonds
(coarsely chopped)
4-44 milk chocolate bars
fcup finely chopped nuts
1 Tablespoon white corn syrup
Melt butter in sauce pan, add sugar corn syrup and water.
Cook over medium heat until hard crack stage, 300 degrees.
Stir in coarsely chopped nuts. Hurry here or you won't get
them stirred in.
Spread into 13 x 9 x 2 in. pan well greased with butter. Cool
thorougly. Turn onto waxed paper.
Melt chocolate and spread on' top. Spread finely chopped
nuts. Place in refrigerator until chocolate is hard. Coat other
side, cool.
Break in pieces, don't cut.
BON BONS

2 lbs. powdered sugar 1 Ig pkg flaked coconut
y lb. butter 1 can sweetened condensed
V t. almond or vanilla extract milk (not evaporated milk )
dash of salt cherries or nuts (optional )
Combine powdered sugar, butter, vanilla, salt, coconut and
sweetened milk. Roll into a ball formation with cherry or nut
inside.

Melt chocolate chips and paraffin over hot water. Dip balls
into chocolate paraffin mixture.
Refrigerate two hours.
Singspiration to be held
at First Christian
This Sunday, Dec. 12. a
monthly Singspiration will be
held at The First Christian
Church in Heppner at 7 p.m.
"We will be using this time as
our 'Carol Sing' for the Christ
mas season." said the Rev.
Don Shelton, pastor of the
church.
The evening will also fea
ture special selections by
people who will focus on

this celebration," he said.

The lone Junior High boys'
basketball team won their
first game of the season by
defeating the Stanfield Tigers,
3fi to 1R.
lone was off and running in
the first quarter and took a
nine to six lead. The Cardinals
continued the pace In the
second quarter as they built a
21 7 advantage at halftime.
In the second half, the two
teams were fairly close, with
the Cards outscoring Stanfield
7 to 4, to lead 28 11. In the
fourth period. lone had eight
points to Stanfield's seven, to
make the final score 36 18.
lone's Mike Rietmann led
all scorers with 22 points. Ken
Snider had six, while Kevin
Rail, Chris Rea, Keith Morter
and Ashley Conklin all added
two points each.
Also playing were Dick
McEllijjott. Brian Ball. Dustin
Padberg, Ben Turley and
Robbie Chervenoll.
The next game for the Cards
will lie December 9, at home,
against the Wheeler County
Falcons.
Hospital staff
gives up party
There will be no Christmas
party for the staff of the
Pioneer Memorial Hospital
this yenr.
Instead the workers will use
the money to "adopt" a
fatherless family In the Hep
pner area.
