Some confusion exists be tween the microwave and convection ovens. They are not the same, in fact, quite different. Convection ovens cook food with the circulating hot air: microwaves create no external heat. The microwave oven's efficiency decreases as the amount (quantity) of food increases. A convection oven can be filled to capacity with food without increasing cook ing time. The convection oven browns and crisps foods beautifully, while in the microwave, little or no brown ing or crisping occurs. Many new developments are occuring in microwave ovens, too.
