Ileppner, Oregon, Thursday, November 27, 1980-ELEVEN M r C'hrlNtmas Plum Putldlng from April Illllon-.Syke. editor This recipe came from my great-grandmother, Eda Schmussman Baumbnrger, who was originally from Switzerland. The family moved to the US in the 1800s and settled in Wisconsin, where the recipe was passed on to my grandmother, Eda Baumberger Best. She and my grandfather moved out West to Yakima, where the recipe was passed on to my mother, Maxine Best Hilton, and eventually to me. The recipe has been altered somewhat over the years, bul it has become a real tradition in our family. It's a perfect holiday dessert for a very special dinner, and looks spectacular flambed. It also makes a nice Christmas gift. Mix in large bowl: 1 cup beef suet, ground or chopped very fine. Mi cup molasses l's teaspoons baking soda dissolved in 1 cup sour milk (For sour milk, add 1 tablespoon lemon juice or vinegar to 1 cup milk.) 1 egR, beaten Hi cup brown sugar 1 teaspoon cinnamon i U teaspoon ground cloves ' Add: 2S cups sifted flour 1 cup bread crumbs 1 cup walnuts, chopped IS cups dates, chopped 1 cup raisins 1 cup candied cherries (You may substitute any candied or dried fruit for the raisins or candied cherries.) 1 large bottle maraschino cherries and juice Mix all together. Turn into greased molds. (Coffee or shortening cans are ideal. You will probably need three small or two lurge cans.) Ornament tops of puddings with candied fruit or nuts, if desired. Place lids on cans. Steam for four hours on rack in large roasting pan or kettle. (Be sure to keep enough water In the bottom to keep your pan from burning.) Remove from cans. (If you have trouble sliding puddings from cans, use a can opener.) Wrap in foil and store in a cool dry place until ready to serve. Reheat, if desired, by steaming in double boiler for an hour. To fiambe: heat 13 cup brandy in saucepan. Quickly pour around edge of pudding. Light immediately. (Keep a pan handy to place over pudding in case you need to extinguish the flame. (You may want to practice the fiambe ahead of time.) Cut in small portions (it's very rich) and serve Golden Sauce atop: 13 cup butter or margarine 3 tablespoons cream or evaporated milk 1 egg. beaten 1 cup sugar a teaspoon vanilla Cream butter. Beat sugar in gradually. Add cream a tablespoon at a time, mixing after each addition. Add vanilla. Beat in egg. Heat over hot water in double boiler. Mixture will be frothy white on top and a rich golden color underneath. Serve over plum pudding.
