Local tomatoes are now avail-!
able for home canning. Because!
of safety factors tne irwnoa oi
canning tomatoes has been j
changed this year. Judith For-1
est, Extension food and nutrit-1
ion specialist at Oregon State j
University, asks that all home-1
makers take a close look at the J
procedure they are following.
Up to date directions call for
the addition of two teaspoons
of vinegar or lemon juice per ;
quart (or one teaspoon per
pint) of tomatoes.
Why add vinegar or lemon i
juice to tomatoes?
Because if tomatoes canned in
a boiling water bath are not suf- J
ficiently acid, there is the dang- j
or that Clostridium botulinum,
if nresent. w ill erow. These bac-,
teria produce a toxin that caus
es botulism wnicn can oe i-
tal if even a small amount is
consumed.
Research has shown tnat un
der certain conditions the acid
ity of tomatoes varies. Tomatoes
of any variety may have a low
acidity due to environmental in
fluences (soil, moisture, weaui-
the degree of ripeness ana
er),
other factors.
