CANNING TIME is sUll here and
I see four boxes of peaches
that are just not going to get
done by themselves! According
to the bulletin from OSU, de
spite all of the modern conven
iences, home canning is still pop
ular with 41 of 10,000 home
makers surveyed in 1962 doing
their own canning. Surprising
enough, tomatoes were listed as
the most popular canned item
with fruits such as peaches,
pears, and apricots listed as
third. For our family, fruit is
the number one spot. In storing
the home canned product, home-
makers are urged to store them
in a cool place as temperatures
cause the food to lose much of
its nutrient value.
