When I met with the women
fair superintendents a few weeks
ago the food superintendents
asked If I wouldn't explain in
my "Chats" the qualities of a
standard" canning Jar.
Instructions In the fair prem

be clean to enter and canned
in standard Jars, except for Jams
a"d jellies which may be enter

sealed.
The question always rises In
canning about the us of com

s ead of standard canning Jars,
This is the position extension
akes:
There are only three condlt
ions necessary to qualify a Jar
for satisfactory canning. It must
be made so that it can be sealed
with an airtight seal. It must
withstand rapid temperature
change. The third is size ana
shape it must be shaped so
that food mav be taken out
