ers, Thornburgh explained. This
produced variations in freezing
times of packaged foods inside
the freezer and some variations
in frozen food quality,
As an aid In overcoming the
problem, the OSC engineers built
a full-scale commercial freezer
with flexible design that per
mitted changes in location of
freezing units and blowers .and
provided comparisons of airflow
patterns.
Variation in air distribution
was greatly reduced by chang
ing the arrangement of the blow
ers and by designing loading
frames that place the foods be
ing processed in a simulated
"tunnel" rather than a stack as
before. The tunnel permits bet
ter circulation and penetration
of the cold air and gives more
uniform freezing.
