If you belong to the charcoal cooking set, you're fully aware of
the importance of being equipped with a truly superlative barbecue
basting sauce recipe. In this highly competitive backyard sport,
mediocrity spells failure; nothing but the best is even acknowledged.
The Mustard Barbecue Sauce, presented here, is guaranteed to
boost your reputation as a barbecue chef. It's a brush-on sauce,
delicious with chicken, and has a mildly sweet, spicy flavor. Use it
to baste half chicken broilers cooked over a charcoal grill, for basting
a roasting chicken cooked on a rotisserie, or as shown here, for
basting individual poussins or Rock Cornish game hens.
Most distinguishing feature of this tantalizing sauce is that it's
low in calories. Reason is that it makes use of the non-caloric
sweetener, Sucaryl, rather than sugar. The calorie saving is really
worthwhile. Just by the use of this sweetener, more than two-thirds
of the total calorieordinarily contained in the sauce are eliminated.
Be sure to tell your guests, for they won't be able to taste the
difference.
Here's the recipe . . . and good luck!
MUSTARD BARBECUE SAUCE
(Low-Calorie)
2 egg yolks 1 tablespoon paprika
1 cup skim milk 2 teaspoons Sucaryl solution or
1 tablespoon flour 16 tablets, crushed
1 tablespoon dry mustard V2 cup vinegar
Beat egg yolks and milk together; gradually add to a mixture
of the flour, mustard, paprika and Sucaryl, making a smooth paste.
Cook in the top of a double boiler until thick, stirring constantly.
Add vinegar gradually, and heat thoroughly. Use to baste chicken
on rotisserie or barbecue grill.
Makes IV2 cups of barbecue sauce. Each tablespoon contains
10 CALORIES; 0.6 gram protein; 0.5 gram fat; 1 gram car!
hvdrate. If made with sugar, each tablespoon would contain :
CALORIES.

Oregon State College As the

Mrs. Ruth Klippstein, Oregon

been making jam and jelly all
summer long may be too busy,
short on storage space or just
plain tired of making more jam
and jelly now. The thing to do,
she says, is to either freeze the
whole berries for later use in
jams or freeze the juice for jelly
making. Measure berries just as recipes
specify for jams, she says. Then
freeze. Extract the Juice and

Care should be used In selec

blue elderberries make excellent

"To Know How to
Grow Old is the
Masterwork of
Wisdom"
By Phil Blakney
Not so long ago there
were fewer old folks be
cause the average person
who reached fifty was con
sidered lucky. Now with an
average life expectancy of
about 70 years, there are
many more people who are
old in years but young in
health.
There are two wise rules
that will make your added
yecrs healthier. Alway vis
it your physician at the first
sign of any illness, and
regularly take one of the
geriatric vitamins that will
supply the extra energy
needed. For just a few
cents per day you can get
from us vitamins made by
the dependable pharmaceu
tical firms who discovered
and perfected them.
