Preparation of meat for the taW
is one of the oldest of the houspVj
arts. Methods of meat cce:.2
have been handed down from
generation to another.
Within the past quarter cc-:
however, intensive studiers c
on at colleges and the U. S. V
ment of Agriculture have : :. .
new information showing 2-:
prepare meat so as to brirr c

formation has taken the guesswork
.out of meat cookery and put it on
a scientific basis.
Fundamentally, there are only
two principles involved in cooking
meat; (1) Dry heat and (2) moist
heat. Tender cuts are cooked by
dry heat methods roasting, broil
ing and pan-broiling. The less-tender
cuts are cooked by moist heat
methods braising and simmering
(cooking in water.)

Heat cookery studies have re

; used, best results are obtained
ih a low temperature. Among
"10 advantages of low temperature
okery are a decrease in cooking

ipat dish.
