Highways to
Health
At the fighting fronts, on the
high seas and at remote outposts
Uncle Sam's, fighting men eat ice
cream regularly. The men at the
front and those in training are get
ting a vital dairy food in its most
popular form. The army and navy
are even using the "mechanical
cow" to make and serve milk and
ice cream regularly, in out of the
way posts.
Because we are sharing with our
boys in service now ice cream may
not be as plentiful at home as in
days past. But remember, it's still
one of the most nourishing and
wholesome foods you can serve.
Ice cream is one of Group 4
Milk and Milk Products of the,
Basic Seven that our government
tells us to eat every day. lj:e cream
contains the same nutrients as milk
in slightly different proportions and
is an important source of vitamins
and proteins. Like all other dairy
products there is a tremendous de
mand for it. It is one of the few re
maining foods for which you do not
need ration stamps.
Serve ice cream as often as you
can as part of your family meals.
In the spirit of good sportsmanship
your family, no doubt has reconcil
ed itself to having less ice cream
than before the war. One way to
satisfy your family's craving for ice
cream is to make it yourself. Here
are suggestions for sherbets that
will please the whole family.
LEMON MILK SHERBET
1 envelope plain gelatin
4 cups milk
teaspoon salt
1 1-3 cups granulated sugar
3A cup lemon juice
1 teaspoon grated lemon rind
Soak gelatin in one half cup of
the milk in a bowl for five min
minutes. Then set bowl over boil
ing water and stir until gelatin is
dissolved. Combine rest of the in
gredients wth the remaining milk
Stir in gelatin. Turn into freezing
tray and freeze until set, without
stirring. Serves 5 or 6.
ORANGE ICE
V-i cup orange juice
1-3 cup lemon juice
xk cups sugar
2 cups milk
Add milk to mixture and place
in freezing tray. When partly fro
zen, remove from tray and beat
with an egg beater thoroughly. Re
turn to freezing tray and allow to
continue freezing until firm. Ser
