New Machine May
Further Improve
Butter Quality
Extensive experimental tests of a
new piece of creamery equipment
which may lead to still further im
provement in the quality pf Oregon
lautter have been started in the Ore
gon State college creamery, and will
be continued for a year. The ex
perimental project is directed by
Dr. G. H. Wilster, head of the .work
in dairy manufacturing in the dairy
department of the experiment sta
tion. The new apparatus is called a vac
reator, and was developed in New
Zealand, where it has been in gen
eral use for the past six years. It is
described as an ultra-flash vacuum
cream pasteurizer, which is said to be
capable of more thorough and effi
cient pasteurization, . without danger
of harming the delicate flavor of the
cream.
F. S. Board of Aukland, New Zea
land, one of the inventors of the
vacreation process, brought the first
machine to America and supervised
its installation in the Oregon State
college creamery. He believes that
the experimental project carried on
here will demonstrate thoroughly
whether this equipment will be a
practicable and profitable addition
to the Pacific coast dairy industry.
While . the vacreation process is
said to eliminate certain undesirable
feed flavors from cream, it is not
intended to take the place of the
best possible present known meth
ods of production and manufactur
ing, Mr. Board explains. It is in
tended for use in those creameries
that are already doing an excellent
job of butter manufacturing by the
present processes. He says Oregon
bas gained a high reputation for the
general quality of its butter output.
Board will be one of several vis
iting speakers at the next annual
dairy manufacturing short course at
the state college next February. An
other will be Dr. C. L. Roadhouse,
head of the department of dairy in
dustries at the University of Califor
nia at Davis. The short course will
be from February 13 to February
24. The annual Dairy Products Man
ufacturers' convention will be Feb
ruary 20 to 24.

CARELESS TURNING BAD
Careless turning is responsible for
hundreds of automobile accidents in
Oregon every year, and also accounts
for several fatalities, Secretary of
State Earl Snell said today.
He referred particularly to turn
ing from the wrong lane, turning
without signalling, and making re
verse turns where visibility is lim
ited. "The chief factors in turning safe
ly are to make sure that other driv
ers understand what you intend to
do, and to delay the turn until auto
mobiles which have the right of way
have proceeded," Snell said.
