A Hot Egg Dessert
Beat the yolk of four eggs, mix
with them a teaspoon flour, three
tablespoons powdered sugar, a very
little salt; flavor with extract lemon
or any other flavors that may be
preferred. Whisk the whites of the
six eggs to firm froth; mix them
lightly with yolks; pour mixture
into a greased pan or dish; bake In
quick oven. When well risen and
lightly browned on the top it is
done; roll out In dish, sift pulver
ized sugar over and send to table.
Vegetarian Dishes Spanish Loaf
This calls for one can of spinach,
four cups boiled rice, two cups
white sauce and one red pepper.
Mix sauce with the rice, chopped
spinach and pepper. Pour into a
loaf and bake twenty minutes.
Scalloped Meat
Two cups of chopped cooked meat
(cold), one cup of boiled rice, one
cup of tomates, butter size of wal
nut or a cup of nice gravy, salt and
pepper to taste, one sweet pepper
(chopped). Mix together and put
In baking dish; cover the top with
breadcrumbs and little dots of but
ter. Bake forty minutes.

ters from famous people. They
usually are dull, though exploited
by the magazines or newspapers In
which I see them. . . . Letters have
not been marked in my life as a
means of imparting wisdom. I find
conversation more valuable. A large
per cent of It is foolish, but in the
steady stream a jewel Is frequently
encountered. My objection to print
is that it is monotonous big talk
from persons on pardae trying to
attract favor by flattering the pre
judices of prejudiced persons. It is
in conversation one nnds real opin
ions.
Oscar Wilde, most tremenduos of
critics of plain people, once made
an admission I thought surprising.
He wrote: "One who is entirely
Ignorant of the modes of Art in its
revelation, or the moods of thought
in its progress; of the pomp of the
Latin line, or the richer music of
the voweled Greek, of Tuscan sculp
ture or Elizabethan song, may yet
be full of the very sweetest wis
dom." Most of the really important
things in the world 'have been ac
complished by men who Knew
nothing of Tuscan sculpture, vow
eled Greek or Latin line.
