It ia just common sense to use
package foods wherever possible.
Dust and personal handling, germs
and whatnot are kept from these
foods where It la Impossible to give
bulk foods the same protection.
This is one of the so-called "food
fads" that one may Indulge in with
out jear or contradiction from any
source, for In helping to keep foods
fresh it contributes as much to
economy as it does to health.
Another so-called fad that la ac

chiefly to cereals, corn meal, flours
and rice, where the most beneficial
substance ia found close to the out
er null of the product, and is lost

Curried Halibut
Melt 1 tbl. butter and soften In it
1 tsp. minced onion. Add 1 tsp.
curry powder mixed with 1 tbl.
flour; atir in one cup milk and one
half cup cream. When creamy, add
2 cups cold boiled or baked halibut,
season and serve very hot
and when cold set in refrigerator
to become very cold. Remove from
molds and serve with whipped
cream.
Canton Punch
Boll 4 cups water with 1 cup sug
ar and one-half cup Canton ginger
cut nne. L,et cook about 20 min
utes; strain and add half cup lemon
juice and 1 cup orange juice. Chill
and when ready to serve, add
charged water. Pour over crushed
ice in tall glasses.
String Bean and Egg Salad
To 1 pint cooked string beans add
one-half cup chopped celery, half
cup chopped nuts, 1 tbl. chopped
onion. Make a paste of the yolks
of 3 hard boiled eggs, add to French
dressing, mix well with the beans
and set away to become thoroughly
chilled.
Raspberry Squash
In a aaucepan mash 4 cups red
raspberries, add 1 cup sugar and
cook together 15 minutes. Then
sift over the berries one-quarter cup
of flour. Cook for an additional
half hour, stirring frequently. When
stiff, pour the mixture Into molds

While the county health officer is
doing all he can to direct and main
tain tourist camps In a sanitary
condition, the success of his efforts
depends largely on the cooperation
of not only camp owners and oper
ators, but also that of the tourists
who patronize them.
Campground owners should lo
cate their camps on suitable sites
and develop them in a manner so
that they will comply with the
rules and regulations of the State
Board of Health as regards a safe
water supply, toilet facilities, and
means for collection, storage and
disposal of garbage and other
wastes. A permit is issued to a
camp that is found to meet these
regulations. The desirable quali
ties in a tourist camp are: general
cleanliness, adequate supplies of hot
and cold water, bath and toilet
facilities, a community kitchen, a
laundry, and a congenial atmos
phere.
Two forms of permits are author
ized. One of these haa a clear white
background and black lettering in
dicating that all the rules and regu
lations have been complied with.
Another card is issued to camps
that do not have standardized cab
ins. It is yellow with black letter
ing.
The tourist should seek camps
which display the permit cards and
refuse to patronize those which fall
to show a clean bill of health, as
evidenced by the absence of the
state permit. In the first place such
are invariably dangerous to health
as they are operating under unsan
itary conditions. Secondly, giving
patronage to such camps is in open
defiance of the state law and de
feats the efforts of the county
health officer to make all the camps
safe and sanitary.
There is a class of people who
have little if any regard for the
common laws of health. Some of
these establish what they call
camps and will operate them solely
for profit and without the slightest
regard to the health of their pa
trons, as long as tourists patronize
them in sufficient numbers, or pos
sibly until an epidemic of some kind
breaks out and they are closed by
an order from the health board.
The poor camps are always com
plaining that they are unable to
supply conveniences due to their
lack of trade; on the other hand
the good camps are usually full.
The matter is largely in the
hands of tourists and they can ef
fectively aid the health officers to
free the state of undesirable camps
by a simple and safe method of
procedure, "Do not patronize them."
The effect would be to place at once
the owners In the position where
they will be approved by the health
official or else close them for want
of returns.

BOYS RETURN FROM CAMP.
Henoner's delegation of four hnva
to the Citizen's Militerv Tralninu
camp Just closed at Vancouver,
Wash., has returned to the city,
having enjoyed the training and re
creation thus afforded. In the ermm
were Harlan Devln, Clarence Hay
es, h,arl Thomson and Maurice Ed
mundson. Young Thomson made
a record at sharnshootine- at rnmn
scoring 49 out of 50, and received a
o prize lor his marksmanship. He
was also awarded a medal for best
first vear cadet. Harlan nevln won
fame among the pugilists, being
ciassea second in his weight divi
sion and winning a silver medal.
Harlan was a sergeant in the mili
tary organization.
SUFFER FIRE LOSS.
E. H. Kellogg was in the city Tu
esday evening with the report that
he and Mrs. Kellogg were complete
ly burned out of their new home on
the George Wright place near Lone
Rock two weeks ago, losing all
their personal belongings. They had
but recently moved on to the place
and were just getting nicely settled
when the fire occurred. Another
house is being erected on the place
and they will be settled again in a
short time, though the blow to them
was very severe. Mrs. Kellogg's
health has not been so well recent
ly, and Mr. Kellogg expects she may
have to return to Portland for an
other operation.
Mr. and Mrs. R. E. Harbison of
Morgan were Sunday visitors at
Heppner. Mr. Harbison is in the
warehouse business at Morgan, and
was on his way to and from the
Voile and Medlock mill in the
mountains.
