Wash two small calf hearts, re
move large veins, sprinkle inside
with salt and pepper and insert fol
lowing stuffing: 1 minced onion, 2
cups bread crumbs, 1 cup stock, 1
tbl. parsley, 1-2 ts. salt, 1-4 ts. pep
per, 1 tbls. bacon fat, 2 tbls. butter,
1 tbl. minced celery, 2 ts. A-l sauce.
Lard with bacon, dredge with flour,
sear on all sides; then add 2 cups
water or stock and cook slowly un
til tender.

Water from springs, brooks, and
streams may be dangerous to health
even though clear and cold. It won't
be long before most of us will be
making trips Into the mountains
whenever time and opportunity per
mit There is a great deal to be
said in favor of this growing ten
dency to seek the open places.
There is also much to be said In
favor of a meal prepared and eaten
in the open air. But there is noth
ing that can be said for the hab
it which some people have of trust
ing to luck to find water wherever
it happens to be convenient to stop.
Many persons have the idea that
water from any running stream in
the country is pure and fit to drink
if clear and cold, because of the
belief that running water purifies
itself. There is a grain of truth
in this old saying, but like many
other traditions there is much fal
sity there also. If running water
crosses a farm yard or pasture and
flows near a highway It is bound
to pick up human and animal pol
lution, which, taken into the human
system, may cause disease. Of
course thre are certain factors that
begin at once to render the water
less dangerous but this process is
slow and uncertain. First of all,
solid material tends to settle out,
the heavier particles first The am
ount of sedimentation depends on
the rate of flow. The faster the
stream the less the settling. Solid
material may be carried long dis
tances from the place where the
water was polluted. In addition to
this, disease bacteria are so light in
weight that there is comparatively
little chance of their settling so
long as the water remains in mo
tion. If other streams join the first
stream, pollution may be greatly di
luted and the stream thus rendered
less dangerous.
These tributaries, however, may
also be highly polluted and increase
the danger. Oxidation of impuri
ties by air .is rapid in fast-flowing
streams if the water flows over
rocks or falls. Sunlight also has
a better chance to kill harmful bac
teria if the stream is turbulent, so
that fresh water is constantly ex
posed. Disease germs tend to die
off rapidly outside the human body.
But all of the factors mentioned
are frequently insufficient to purify
water in a stream so that it is safe
for drinking purposes. There is no
way to tell by the appearance of
water whether it is safe to drink or
not Even an expert sanitary chem
ist can not tell except by careful
analysis.
Do not take a chance of serious
infection by drinking water the his
tory of which you know nothing.
Get your water from a supply that
is under supervision. Don't drink
water from every roadside spring,
brook or stream.

Frank Sallng visited in town for
a short time on Thursday afternoon
last from his ranch down Alpine
way. While it has been rather
cold and backward in that section
so far this spring, Mr. Sallng feels
that the prospects for a good crop
are encouraging. Showers have
been coming along, and with warm
er weather conditions the grain Is
looking good.
Dr. D. M. Prince, of Seattle, Is
taking care of the madical practice
of Dr. A. D. McMurdo, during the
latter's absence from the city. Dr.
McMurdo was in Portland the end
of the week for the trap shoot, and
remained over expecting' to return
home this week-end.
Frank Everson states that he has
never seen a better crop prospect
than the people of his section have
this season, and the country lying
south and west of lone is certainly
showing up well. He states that
he has his residence all repaired
from the damage it received recent
ly when a Are visited Mr. Everson
and family. Frank was looking af
ter business here on Saturday.
Mrs. Edna Slocum, who has ex
tensive property interests in this
city, has been spending the week
here looking after business, from
her home at Portland.
