ACAI'ON la most delicious eating.
The following recipe may be
varied aa to stuffing nnd sauce. Oyster
stuffing 1 especially good:
Fteast Capon With Savory Stuffing.
Conk the liver of the capon with one
or two chicken liver In very little
water and press through a colander.
Moisten one pint of bread crumb with
the water In which the livers were
cooked; press out superfluous mois
ture, and add while hot, six tahleapoon-
ful of butter, one tablespoonful of
chopied parsley, six chopped muh
rooms, seasoning to taste and lastly
hind with one well-benten egg. Fill
the capon, truss for roasting and cook
in a hot oven, allowing fifteen to
eighteen minutes to a pound for a
large capon. Serve with:
Truffle 8auce.
Rub through a colander with two
tablespoonfula of butter, one-fourth of
a pound of truffles, heat in a saucepnn
with one ounce o lean hum finely
chopped, and a sprig of parsley
minced. Add one and one-half cup
ful of brown itock and thicken with
one and one-half tuhlcapoonfula of
arrowroot, blended with cold wnter.
Mushrooms In Pppsr Cups,
Remove the item from green pep
pers, cut slice from the top and take
nut seed and membranes. Parboil,
place each pepper on s slice of toast
and fill with mushrooms broken Into
small bit and pressed firmly kitn tlie
cups. I'lace the toast and peppers on
a grating or rack In a dripping pan
and bake In hot oven fifteen to twen
ty minutes. Season with butter and
suit, with a dash of pepper on each
eti p. '
