Bread Must Be Wrapped Cool.
Many persons who are fond of
freshly baked and warm bread ob
ject to the sanitary method followed
by most bakers in wrapping and
sealing all bread cold as a protection
against dust, flies, germs and filth
while it is being conveyed from the
baker to the consumer. Bread
fresh from the oven, if wrapped
while warm, becomes moist and
clammy and of unpleasant flavor,
and it is therefore necessary to al
low tho loaf to cool thoroughly be
fore being wrapped. After some
experiments the experts of the de
partment of agriculture have found
that if a cold wrapped loaf is un
wrapped and placed in the oven in
medium heat for ten minutes it will
" he crisp without and .tender within.

Japanese and Their Gardens.
One phase of Japanese character
is discussed in George II. Fitch's
"The Critic In the Orient" in a sec
tion on the Japanese sense of beau
ty, more especially in connection
with their gardens:
Every Japanese, no matter how
small and poor his house, has a gar
lcn to which he may retire and "in
vite his soul." Hero in the quiet of
the evening the master of the house
retires and gives himself wholly to
the contemplation of nature.
He becomes for the time as a little
child, and his soul is pleased with
childish tilings.

E. L. Parrott,
Rogeburg, Ore.
Repeated experiments made by the
agricultural colleges, and the results
obtained by the actual growers of al
falfa in the semi-arid sections of the
west, in many parts of the Pacific
northwest, throughout the corn belt
states, and in the south and east, are
conclusive evidence of the great value
of alfalfa.
There are few farmers whose profits
would not be increased greatly by
raising alfalfa. Every fanner should
aim to produce, as far as possible his
foodstuffs upon his own farm.
During the last few years, the area
devoted to alfalfa has greatly In
creased in the region west of the Mis
souri river, and it is certain that
there will be an equally rapid in
crease throughout the eastern and
southern parts of the United States,
and in that region known as the In
land Empire.
Many of the attempts . In the past
to grow alfalfa in the semi-arid sec
tion in Washington, Oregon and parts
of Idaho have failed, but with our pres
ent knowledge of the requirements of
the crop there will be little, if any,
more trouble in securing a stand.
Alfalfa will Boon be grown abun
dantly and profitably upon every
farm. It is no more difficult to grow
than clover and gives double the
yield. The deep rooting habit of al
falfa enables it to resist drouth when
clover, timothy, blue grass and other
forage grasses die for want of mols-1
ture. Alfalfa roots grow deep into
the soil far beyond the roots of oth
er plants.
Its drouth resisting power Is of no
greater importance than its great
value as a soil enricher. The long
roots bring phosphorus, potash and
other plant foods from below and
store them in the upper soil for the
use of other plants. Experiments
show greatly increased yields of oth
er crops grown upon alfalfa sod.
Alfalfa is rich in protein, the most
essential element in feed to 'make
bone, blood and muscle in growing
animals.

-An Artist's Rusa.
A Roman cavalier commissioned

found that he could produce a de
gree of cold equal to that of the
coldest winter day. It happened
that tho day on which he made his
final experiment was tho coldest
anybody could remember, and,
struck with the coincidence of his
scientific discovery, he hastily con
cluded that ho had found the low
est degree of temperature, either
natural or artificial. Ho called the
degree "zero" and constructed a
thermometer graduating up from
zero to boiling point, which he num
bered 212 and the freezing point 32.
When the portrait was finished, the
painter asked 100 crowns in pay
ment. The highborn sitter, amazed
at the demand, returned no more
nor dared to send for his counter
feit presentment, whereupon the
artist hit upon tho happy expedient
of first painting bars across ihe
portrait, then alfuing tho doleful
legend, "Imprisoned for debt," and
finally placing it in a prominent
part of his studio, to which Koman
nobles frequently resorted. Ere
long a rich relative came to tho res
cue and released his kinsman.

Why We Need Alfalfa.
There is no combination of feeds
so economical for the production of
beef, pork, mutton, butter and eggs,
as corn and alfalfa. Neither will give
the best results alone. We need alfal
fa because it balances up the corn
ration and saves the large waste of
starch which always takes place
where corn is fed alone. We need
alfalfa because we can by means of
It grow on our own farms the protein
more profitably than we can buy It in
feed stuffs. We need alfalfa because
It feeds the soil and enables us to
grow larger crops of corn, wheat and
oats. We need alfalfa because it pro
duces on an average double the feed
value per acre of clover or any other
forage crop.
Advisable to Inoculate.
Iff regions where alfalfa has not
been grown it is found to be neces
sary to Inoculate the ground by sow
ing three or four bags of soil secured
from a field where alfalfa or sweet
clover has been grown for a num
ber of years; or where it is more
convenient, artificial culture, such as
nltragin, "farmogerm," etc., may be
applied. Where alfalfa has not been
grown before It may make the differ
ence between success and failure.
