Peery is of such general importance to milk producers that we give it publica tion. We judge our cow* by a but ter fat standard, the real fo >«l value in milk; while the Government, in- fluaPCed by big milk condenser lea, makes solids the standard. I «hall try to ex plain some of the reason* why our present condensed milk standard is an injury to the dairy interests in communities where cows test on an average above 3.9 pet cent butter fat. The Government law, a* well as our state law (which to lie consis tent should lie the same aa the Fed eral law) pruvides that condensed or evaporated milk shall contain not leas than 7 8 per cent butter fat and that the solids, including fats, shall be not less than 25.5 per cent. It la an evident fact that the av «rage teat of cows in the Willamette Valley, as well as in most section« of the Pacific Coast states, will av erage better than 4 per cent butu r fat. This being the case it is nec essary for condenser iea in these sec- lions to carry a surp.us in fats in the manufactured product of from 3 to It) points Toe reason for this is that the ratio of suiiJs is lower in high testing cows; therefore, in or der to keep the total solids up to the standard (25.5) this surplus m fats is necessary. Now th«- gist of th«- matter is this: The milk containing this excess in fats is hy the standard forced to sell on the market at the same price as milk containing 7 H'< fat.
