Melt the butter, add the dry In

boiling point, stirring constantly.

yolks, pour on the cool mixture and
cook in a double boiler till the eggs
thicken, stirring constantly. Chill
and thin with cream, or the stiffly
beaten egg whiles maybe fulled in
