Fruit should be picked before it is over-ripe, and vegetables while tender and young. Do not wait for the end of the season, but put iip the new things as they come along. If you do not know how much better small beets are than large ones, find out this summer. Carrots two or three inches long seem like different vegetables when com pared with course, woody, full grown ones. Can them while they are small. A jar or two, put up every day while one is getting dinner, seems to take no extra time. If one hurries a bit, or if one ser enely plans to take advantage of the odd minutes while wait ing for something else to cook, these little extras can be done without any trouble, while on the farm canning parties may be planned ahead when it is known that large amounts will be ready to can at a given time.
