(Milk Street via AP) Asian chili-garlic sauce punches up pork burgers By Christopher Kimball Christopher Kimball’s Milk Street F or cookouts this summer, update long-held traditions with globally inspired flavors — starting with the burger. This recipe from our book COOKish, which limits recipes to just six ingredients without sacrificing flavor, is loosely based on a Filipino “chori” burger. It’s a spiced chorizo patty topped with banana ketchup, mayo, and a relish called atchara, or pickled green papaya. The sweet-savory toppings wonderfully balance the richness of the chili-spiced pork. Looking to pare the ingredients down to the essentials, we tried jarred Asian chili-garlic sauce and were delighted with the results. Most jars at the supermarket contain a bright mixture of chilies and garlic, of course, but also tangy rice vinegar, salt, and sugar, making it several seasonings in one. Since pork burgers tend to dry out easily, we mixed the sauce directly into the ground pork to help keep the meat moist. A smear of chili-garlic mayonnaise reinforced the flavors in the meat mixture. Pillow-soft, subtly sweet buns are a particularly good match for the tender, juicy burgers — we especially like potato buns or rolls. Smoky Chili-Garlic Pork Burgers Start to finish: 30 minutes Servings: 4 1/3 cup mayonnaise 5 teaspoons plus 2 tablespoons chili-garlic sauce, divided 3 teaspoons packed brown sugar, divided 1 pound ground pork 2 teaspoons smoked paprika Kosher salt and ground black pepper 1 tablespoon neutral oil 4 hamburger buns, preferably potato buns Mix the mayonnaise, 5 teaspoons chili-garlic sauce, and 1 teaspoon sugar. In a medium bowl, mix the pork, paprika, the remaining 2 tablespoons chili-garlic sauce, the remaining 2 teaspoons sugar, 1 teaspoon salt, and 1/2 teaspoon pepper. Form into 4 patties. In a 12” nonstick skillet, heat the oil until shimmering. Add the patties and cook, flipping once, until well browned on both sides and the centers reach 160° Fahrenheit, 8 to 10 minutes total. Serve in buns spread with the mayonnaise mixture. Ingredients: 3 pounds large squid, cleaned, tubes sliced into 1” pieces and tentacles left whole 4 cups buttermilk Vegetable oil, for deep frying 1 tablespoon olive oil 2 tablespoons salted butter 3 garlic cloves, minced 1 (16-ounce) jar sliced banana peppers, drained 1 (16-ounce) jar sliced hot cherry peppers, drained and 1 1/2 tablespoons juice reserved 1/4 teaspoon garlic powder 1/4 teaspoon ground black pepper 3 cups all-purpose batter mix, such as Fis-Chic 1/4 teaspoon kosher salt Chopped fresh flat-leaf parsley, for garnish 3 lemons, cut into wedges (see note) 1 (1-pound) package mesclun mix Directions: In a large bowl, soak the squid in the buttermilk for 20 minutes. Pour the vegetable oil into a deep fryer or large, heavy-bottomed pot and heat to 375º Fahrenheit. Meanwhile, heat the olive oil and butter in a large skillet over low heat. Add the garlic and cook until just browned, then add the banana peppers, cherry peppers, reserved pepper juice, and garlic powder and cook just until heated through. Set aside. Put the batter mix in a large bowl. Drain the squid and coat it in the batter mix. Working in batches as necessary, add the squid to the hot oil and fry for 3 minutes, seasoning with the black pepper while it fries. Transfer the calamari to paper towels, season with the salt, and let drain for 1 minute, then transfer to a large bowl. When all the calamari is done, quickly toss with the pepper mixture. Pour the calamari and peppers onto a platter, sprinkle with parsley, and serve with lemon wedges and mesclun mix. Note: Instead of cutting the lemon into wedges, you can make 45º cuts all around each lemon to cut it in half, then dip the lemon halves into the parsley.
