South rn Oregon Newa Review Enhance Winter’s Stew With Variety Of Seasonings H earty chunks of m eat and colorful vegetables m aking up a savory stew tem ptingly answ er the dem and of w in try day ap petites. Am ong the seasonings to en hance the flavor of stew th ere I Is buy leaf, celery seed, thym e. Cloves, peppercorns, chili pow der and c u rry pow der. Each seasoning provides its own dis tinct flav o r to add to th e glory of this w inter favorite. W hen p rep arin g stew , th ere is the choice of light stew or brown stew. For the latte r, the meat is brow ned in m eat d rip pings. F o r a ric h e r color it is first dredged w ith flour. E ither brow ned or not', the m eat is se asoned r.s desired, then com plet ely covered w ith w ater. The u t ensil is tightly covered and the m eat is allow ed to cook slow’ly until tender The slow cooking— sim m ering, not boiling — results is m ore flavorful and m ore at- I tractiv e appearing m eat. Vegetables cooked w ith the m eat are added ju st long enough before the end of cooking tim e so they will be just cooked, and w ill retain th e ir brig h t color. Be sides the common stew vegetab les — carrots, onions, potatoes and peas, such vegetables as p ar snips, celery, cauliflow er, green pepper, lim a beans and B russel sprouts m ay be used. They a re | left whole, cut in halves, diced, q uartered or sliced. With the m eat and vegetables cooked, th e n e x t step is p re p a r ing the flavorsom e gravy. The liquid is drain ed from the stew and th ickned w ith tw o tab le spoons f flo u r for each cup of liquid. The m ethod of serv in g allow s m ore v ariety w ith stew s. M eat cubes and vegetables m ay be a ttrac tiv e ly arra n g e d on the p la tte r w ith th e gravy served in a boat. O r th e vegetables m ay be arra n g e d around th e o u ter edge of th e p la tte r w ith th e m eat cubes inside. O r th e m eat and vegetables m ay be a rra n g e d as individual servings on a large p la tte r o r chop plate. M eat pie is closely re la te d to stew — ideal fo r p lan n ed lefto v er stew. The m eat, v eg etab les and , gravy a re placed in a casserole J w ith hot biscuits, cereal o r m ash ed potatoes on top. O r they m ay be topped w ith a sh o rtcak e | crust, pie crust, o r crested w ith m ashed sw eet potatoes o r rice The casserole is then placed in the oven ju st long enough to thoroughly h e a t th e stew and to bake o r brow n the crust.
