Corned beef won its way to
fame teamed with cabbage.
Served cold in u variety of ways
it's equully as tempting, making
it a highly practical summer
meat, says home economist Reba

To cook corned beef it is
placed in a kettle, covered with
water and simmered over low
heat until the meat is tender
and juicy. This takes from 40
to 50 minutes per pound. If
corned beef is to be served cold
it is allowed to coo, in the cook
OPEN FACED SANDWICH
Here's a quick open faced
sandwich. Cut salt pork slices
in half and fry them until they
are crisp. Dram off the fat, re­
serving three tablespoons to
brown chopped green onions.
When well browned add a can
of baked beans. Toast slices of
bread lightly, then place a but­
tered slice on each plate, ar­

lVt cups sifted enriched flour
*4 cup enriched corn meal
5 teaspoons baking powder
1 teaspoon salt
4 tablespoons shortening
% to % cup milk
Sift together dry ingredients. Cut

utes. Remove from heat and add
the nuts and salt: Cool mixture
