Fam ilies seem to prefer the lightest of food and it som etim es is hard to build up the calorie count on salads and cold m eats. But fruit and rich milk or cream can come easily to the rescue when other m eans fail. T h e r e a r e so m any delectable re frig erato r des s e r t s m a d e of fruit and berries and cream that it will take m ore than a season to try them all. F irst of all th ere's the shortcake variety. Bake your biscuits golden brown, split and b utter them and then drizzle luscious crushed and sweetened fruit or berries between the biscuits Drown them in cream , eith er plain or whipped, and watch them disappear. Then, too, th e re 's an am azing va riety of frozen d esserts which take their share of fruit and cream . These lake but » few m inutes to m ake and keep well for several days in (he refrigerator. If you’re shy on sugar use pre serves or fruit sauces, and you w on't have to dip into the sug ar bowl at all TRY SOME of these recipes and your w arm w eather problem will be solved: Apricot Sherbet. (Makes I quart) I cup evaporated milk, thoroughly chilled 3 tablespoons lemon juice 1 cup apricot preserves Whip chilled milk very stiff Beat in lemon Juice, then fold in p re serves. Pour nt once into cold freezing tray and chill for several hours. V ariations: Straw berry, cherry or peach preserves or m arm alad e may be substituted for apricot preserves. Apple Sherbet. (Makes 1 quart) 1 cup evaporated milk, thoroughly chilled 2 tahlespoons lemon Juice 2 cups sw eetened applesauce, chilled Dash of nutm eg Whip chilled milk very stiff. Beat in lemon Juice. Fold in applesauce and nutm eg Pour at once into cold freezing tray and chill well. O range lee C ream . (Serves 8) 20 m arshm allow s I cup orange juice G rated rind of 2 oranges Juice of 1 lemon 14 pint whipping cream Add 2 tablespoons of w ater to the m arshm allow s and place them in the top p a rt of a double boiler. Stir c o n s t a n t l y until the m a r s h m a l lows are half dis solved. Remove from heat and stir until cream y Cool, add orange juice, rind nnd lemon juice. Whip cream until thick and add to the m ixture. Place in tray and freeze, stirrin g often, un til firm. LYNN SAYS: Good Housekeeping Secrets When cooking cabbage or onions, the objectionable odor m ay be elim inated If the vegetables are cooked in half milk and half w ater. Use any excess liquid for m aking cream sauces or soups. If you like crisp skins on baked potatoes, scrub clean and then rub with a m etal sponge and bake. To retain color in green veg eta bles, cook in an open pan with a m inim um of w ater and watch cook ing tim e carefully. B utterscotch Ice Cream , i Makes 1 quart) 3 ta h lesp o o n s hult**r '» cu p brown su g a r 1 cup milk I ’i tahlespoons cornstarch 2 tahlespoons cold milk Pinch of salt *4 teaspoon vanilla I cup heavy cream , whipped Cook butter and sugar in top of double boiler, until butter is m elted and well blended with sugar. Add milk and heat to boiling. Mix corn starch with cold milk and stir into butter and sugar m ixture; add salt and cook until thickened. C o o l and add vanilla. Fold in whipped cream and turn into re frig erato r tray and freeze. stirring once during freezing. M arshm allow Delight. (Serves 8 to 10) *4 pound m arshm allow s 114 cups diced or crushed pineapple 1 pint whipping cream 2 tahlespoons sugar 2 teaspoons vanilla ' ■ cup m araschino cherries, cut up Cut marshmallow’s into quarters. Add pineapple and place in a cov- ered container overnight. Whip cream , add su gar and vanilla. Fold whipped cream into m arshm allow s and pineapple; add cherries. Pour into freezing tray and allow to chill thoroughly or partially freeze be fore serving. •G rapefruit Sponge. (Serves 6) 3 eggs, separated !4 eup sugar •>i cup canned, unsweetened g rapefruit juice I tablespoon untlavored gelatin ’ » enp cold w ater B erries Beat egg yolks until light. Add y« cup sugar and beat well. Add grap e fruit juice and cook m ixture iw er boiling w ater until it coats a spoon. Stir constantly. Soften gelatin in cold w ater for 5 m inutes. Add to hot grapefruit juice m ixture and cool until slightly thickened. Beat egg whites until stiff but not dry. G radually beat in rem aining sugar, Fold into cooled m ixture and pour into a one-quart mold. Chill until firm. Unmold on a plate and serve with sliced or crushed ber ries in season. F resh Peach Cream . (Serves 8 to 10) 2 cups fresh peach pulp 1 cup granulated sugar ’4 teaspoon alm ond e x tra c t 1 tablespoon lemon juice 3 tahlespoons cold w ater I!4 cups coffee cream Combine peach pulp, sugar, ex tra c t and lemon juice. Add coffee cream . Pour into tray and freeze. Rem ove tray and stir once during freezing process The stirrin g m ay be done io the tray. Waxed artificial flowers are cleaned easily by dipping in clean ing fluid several tim es, then allowing to dry. To rem ove w hite spots from a shellacked surface, wipe with alcohol. So. check over your w ard robe now and see if it m eets the de m and for style as well as comfort. If you have dresses with fabrics that rum ple and w rinkle easily, or lose their shape quickly after w ear ing. discard them. Yes, I realize this seem s wasteful, but to me it’s more of a waste to look and feel lack of neatness all during the w arm I weather. We all like light things because they absorb less heat and m ake us feel cool, but lightness as well as neatness can be com bined in dresses if your fabric is well finished. Or, if it’s a dark linen, you m ight choose a light jack et or even add lovely, sum m ery lingerie touches to the garm ent to m ake it look in season.
