less fortunate.

th a t the average loaf o f bread dries
ra th e r q u ic k ly , and there are sev­
e ra l slices w ith in the week that arc
regarded as unfit fo r sandwiches.
But there are lite ra lly thousands of
uses fo r such bread.
Why not s ta rt on a personal
cam paign of yo u r own ju s t to see
how m uch you can save by using
e ve ry scrap o f bread well? Spread
the w ord to y o u r friends and neigh­
bors. and le t’ s see i f we can’ t re a lly
save food. w hich is the equivalent
o f p u ttin g d o lla rs and cents in your
pocketbook?
Here are ways to use those le ft­
over pieces of bread w ith meats
and vegetables. They stretch these
o th e r foods as w ell as m ake the
dish m ore savory, w hich w ill be of
in te re st to the palate as w ell as the
purse.
Taugy Cheese Dish.
(Serves R)
5 tu p « toasted *4-lnch bread rubes
’ 4 pound A m e rica n cheese, grated
S eggs, beaten
’ 4 teaspoon salt
'•i teaspoon p a p rika
*4 teaspoon d ry m ustard
2*4 cups m ilk
A lte rn a te layers o f cheese and
toast cubes in a greased 1*4 q u a rt
casserole. Com bine beaten eggs,
salt, p a p rika , m ustard and m ilk .
P our liq u id m ix tu re over bread and
cheese in casserole. Bake in a
m oderate <350 degree) oven fo r 35
m inutes.
M eat Souffle.
(Serves 6)
2 cups ground cooked meat
*4 teaspoon salt
*4 teaspoon pepper
4 egg yolks, beaten
2 tablespoons shortening
*4 cup chopped onion
1*4 cups m ilk , scalded
3 cups bread cubes
4 egg w hites, s tiffly beaten
Com bine m eat, salt, pepper and
oeaten egg yolks. M e lt shortening in
a sm a ll s k ille t,
add

cook five

utes. Pour scald­
ed
m ilk
over
bread c u b e s .
C o m b in e

bread and m ilk . Fold in s tiffly beat­
en egg whites. Pour in to a greased
1*4 q u a rt casserole and set in a
pan of hot w ater. Bake in a m od­
erate oven fo r one hour.

14 cup firm ly packed brown sugar

m ove skin. Slow ly com bine beaten
egg w h ite and corn syrup, beating

14 cup sugar
3 egg w hites
6 tablespoons sugar
14 teaspoon v a n illa
