What Is Processing?
When we speak of canning vege­
tables, we often use the w ord p roc­
essing. T his s im p ly means th a t you
can the food, p lacing it in ste rile
Jars and apply a high enough te m ­
p e ra tu re to k ill the m icro-organism s
and then seal the ja rs so no m ore
can get in.
I f yo u ’ re new at this canning busi­
ness, re m e m b e r these tw o im p o r­
ta n t points; get produce as fresh
as possible (th is is where having a
garden of yo u r own helps so m uch)
and try in g to observe to the le tte r
the rule of g e ttin g the vegetables
fro m garden to can in tw o hours.
Rule No. 2 is to have a ll y o u r
equipm ent ready so that there w ill
be no tim e lost once you s ta rt the
vegetables on th e ir way to the ja rs.

The day before you a c tu a lly de­
cide to do y o u r canning check
over the above equipm ent lis t and
see th a t e ve ry th in g is la id out and
ready. The ja rs should be checked
fo r »icks and cracks by ru n n in g a
