w ay to put up some o f the beet
crop. The acid o f vin e g a r used in
p ic k lin g helps preserve beets and
keep them a b rig h t red. A pressure
canner is not necessary fo r canning
p ickle d beets. I f p ickle d beets are
to be kept m ore than a few days,
they should be processed in a b o il­
in g w a te r bath, as in canning fru its .

Q uick soups can be m ade fro m
g rated ra w ro o t vegetables.
The
g ra tin g saves cooking tim e . Use tw o
cups grated ra w ca rro ts o r tu rn ip s
to one q u a rt o f m ilk . Season w ith
onion, salt and chopped parsley. Add
