ingredients. Set aside in top section
of double b oiler. M e lt b utter, add
flour and when it bubbles, add w a te r
slowly, s tirrin g constantly. Pour in
egg m ix tu re and cook in double b oil­
e r u n til smooth and thickened, s tir­
rin g constantly to avoid curdling.

!4 cup mashed potato

K cup sugar
I yeast cake
1 teaspoon salt
4!4 cups sifted flour
% cup shortening
C ru m b le yeast, add salt, sugar
and w ater. Add potato and potato
w ater. S tir in flour to m a k e a soft
sponge. Blend in m e lte d shortening.
Add re m a in d e r of flour and knead
u n til smooth. Place in an oiled or
greased bowl. L e t rise fo r 2 hours.
Knead. L e t rise u ntil double in bulk.
Shape into rolls.
Place on oiled
sheet or m uffin pans. L e t rise again
u n til lig h t,»ab ou t 30 m inutes. B ake
20 to 30 m inutes in a 400-degree
oven.

14 teaspoon salt
C re a m shortening and sugar, then
add lig h tly beaten eggs and beat
thoroughly. Add m in ce m ea t, fru it

dients to gether and fold into the

cake pan and bake in a very slow
(275 to 300-degree) oven fo r 2 to
2*4 hours.
