HOW TO MAKE MILK SOUPS
Milk may be used with many vege­
tables to make nourishing soups.
Make them, for your children!
A
nnlk vegetable soup Is one of the best
foods you can give your family for
dinner or for supper. It is also one
of the best ways to help your child
consume his daily quart of milk
Milk is recognized by scientists as the
most valuable and yet one of the
cheapest foods for health.
Milk soups may be made from dif­
ferent vegetables such as lentils,
beans, dried peas, corn, celery, onions,
spinach, potatoes and tomatoes. Use
only one vegetable at a time. This
provides opportunity to make differ­
ent kinds of soups und prevents child­
ren especially, from refusing to eat
them.
Cook any vegetables selected with
a few slices of onions until soft.
Chop finely or rub through a strainer
according to the vegetable. Add the
chopped or strained vegetable and
juice to
the white sauce (recipe
below.)
Lentils, split peas or dried beans
are excellent for soupis.
They are
both nourishing and cheap.
Wash
such vegetables thoroughly and soak
over night. Cook with onion in the
water in which they have soaked.
Do not add soda to the cooking water
Rub cooked vegetables through a
strainer.
In making tomato soup use 1-8 tea­
spoonful of soda for each cup of juice
Stir the soda into the juice just be­
fore adding it to the white sauce to
prevent curdling of the milk.
Serve
at once.
WHITE SAUCE
2 tablespoonfuls butter or other fat
1 tablespoonful of flour _for each
cup of milk and vegetable juice used
1 teaspoon salt
2 cups milk
(All measures are level)
Use a double boiler for making
white sauce. Melt the fat, add flour,
and stir until well mixed. Gradually
add the milk, stirring until smooth
and slightly thick. Add the chopped
or strained vegetable and juice to the
thickened milk. The amount of vege­
table necessary varies with the kind
and flavor—usually 1 cup of vegetable
for each 2 cups of milk. If the soup
is too thick after the vegetable is
added, milk or vegetable juice can be
used to make It the desired consist­
ency. Season to taste with salt and
butter.

48 of
Washington County, State of Oregon, that a school meeting of said district
be helu at Bea\erlon on the 23rd Uay of October, 1933, at 8 oclock in the altet-

levying board, and to vote on the proposition of levying a special district tax.
The total amount of money nteded by the said school district dunpg the
fiscal year beginning on June 20, 1933 and ending June 20, 1934, is estimated
in the following budget and includes the amounts to be received from the
county school lund, slate school tund, elementary school fund, special district
tax, and ull other moneys of the district.
When the budget meeting is held in connection with the annual school
meeting, the following provision of section 232, ¡School Laws 1929, snould be
observed: "Until the ballots are counted at least one hour after the time set
for the meeting in districts of the second and third classes, any legal voter of
the district shall be entitled to vote upon any matters before the meeting.”
