French, Director* S a v e d fr o m A w fu l P e r il Commenting on some phases of American life at the close o f hi* recent visit -to this country, Sir Thomas Lipton, who is himself a dealer in groceries and provision* and therefore presumably interest­ ed in their consumption, said the thing he could not get used to was the great waste at American tables. This he had noted alike in the home, the hotel and the restaurant. Enormous quantities of food were carried from the kitchen to table, to be toyed with, more or less and then sent back useless and destined to the garbage pail. H e said that he could never bring himself to send his plate away with leavings on it. The wasted meat struck him as particularly reprehensible. A liv­ ing creature had to be deprived of its life to furnish food for man, of which man made the scantiest use. And Sir Thomas isn't the first man to remark it, that huge steaks are served. out of which only the ten­ der spots were cut. The question of nutrition gave way entirely to tarte or a whim. N o soil can for­ ever produce food enough to per­ mit such waste. This observation will readily be confirmed by every observer of American habits. Desire and needs are kept as far apart as possible in the average mind.
