W hen the chicken is h alf cooked add h alf a tablespoon ful o f salt and one-eighth o f a tea spoonful o f i>epper. Rem ove chicken, strain stock, skim off fa t, then cook until reduced to four cupfuls, thicken with one-third o f a cupful o f flour di luted w ith enough cold w a te r to pour easily. P lace a sm all cup in the cen ter of a baking dish, a rran ge round it pieces o f chicken, rem oving some of the larger bones, pour g ra v y and cool. C over w ith piecrust in w hich several incisions h ave been made for the e s cape o f steam . W et the edge o f the crust and [hit round a rim, h avin g the rim come close to the edge.
