Old-Tim Chocolate Cak.
One cup of brown sugar; one egg
yolk, beaten light; one cup of aweet
milk ; one-naif cap of grated chocolate ;
one teaspoonful. of baking o1a ; one
cup of flour; one tableiqioouful of melt
eit butter, added last of all. Bake In
loaf-tin, and cover with a boiled Icing.
Make this of one cup of sugar and a
gill of water boiled until It threads.
Pour orer the well-beaten white of an
egg. and spread on the cake.
Steamed Apgtee.
A delicious and simple way to pre
pare winter apples: Peel, quarter
core six or eight apptewt steam or boll
until about half cooked ; take from the
fire and let cool ; make a syrup of two
cup of sugar and half a cup of water ;
drop the apples Into the boiling syrup
for a few minutes, or until they become
clear; let cool and serve with cream,

action of hot and cold water and the
majority of bot alkali and adds.
Virarlwla Sweet Potato.
Boll the sweet potatoes for twenty
minutes, remove from the fire, peel and
cot tbem Into slices. Put a layer of
sweet potatoes, then cover with sugar
and cinnamon; continue this until the
dish is full, making the last layer of
sugar. Then pour over the top a tea
cupful of hot water In which has been
melted a tablespoouful of butter. Bake
In the oven until brown.
Cora Floor Cake.
Two ounces of flour, quarter pound
corn flour, half pound loaf sugar, four
ounces butter, one dessert spoonful bak
ing powder, four eggs. Beat the butter
and sugar to a cream, then add the eggs
well beaten, one at a time, add the
flour, baking powder and corn flour;
beat five minutes; flavor with almond
or lemon; pour into a buttered tin and
buke for one hour.

Baked Apple Batter.
Delicious. Pare tart apples, quarter,
core and cook them as for plain apple
suuee. When cooked sweeten to taste
and to a gallon of sauce add a cupful
of boiled cider. Place the sauce In a
crock In a moderate oven, and bake un
covered for several hours, or until It
has thickened sufficiently. Stir occasionally.
Marshmalloer Confection. )
One-half pound of English walnuts,
chopped fine and added to a pound of
marshmallows cut up. Mix these to
gether. Take a pint of cream and whip
It until stiff. Stir into It the nuts and
marshmallows, also a quarter of a cup
of candled cherries chopped fine. Flavor
with a few drops of vanilla. Bet on the
Ice an hour or two before serving.
Whit Cak. V
One-qunrter cup of butter, one cup of
sugar, one-half cup of sweet milk, one
find one-half cups of flour, sifted with
one teaspoonful of baking powder, the
whites of two eggs. Cream the butter
and sugar, add the milk, flour and bak
ing powder; lastly, beat the eggs to a
stiff froth and fold into the batter.
Bake In two tins.

Beat the yolks of three eggs until
thick. Gradually beat In one-third of
a cup of sugar and a grating of lemon
rind. Then cut and fold In a scant
three-fourths of a cup of flour and the
white of one egg, beaten dry. Shape
with, a pastry bag and pfaln tube on
waxed paper. Bake about ten minutes.
