In buying new brooders there pJhould be great care as to selection and a strict observance of rules regulating temperature. Brooders before being used should be cleaned, scrubbed, dis infected inside and out, lamp flues cleaned, outside painted, then put in the sun to air and dry and also new wicks bought and used for each hatch. Now to find a good location. An in door brooder should be kept in a warm place where temperature never goes below freezing. An outdoor one should be in a sunny place, for sun is very essential. The brooder placed, cover floor and the hover with an inch of dry sand, on top of which (except under hover and for a foot in front of it) spread finely cut clover or hay for about an inch. Light the lamp, or stove, whichever it may be, regulating the temperature according to directions so the heat Brown Leghorn. where the chicks sleep Is between 95 and 98 degrees the first week, gradu ally dropping to 90 degrees by the fourteenth day and to 80 degrees the twenty-first day. Leave the newly hatched chicks In the Incubator nur sery thirty-six hours, then transfer them in a warm lined basket to the brooder (evening is the best time), providing a small drinking fountain filled with fresh tepid water and a box filled with charcoal. The first three days feed a mixture of one-third stale bread, one-third rolled oats and one-third hard boiled (twenty min utes) eggs, using shells and all (Infer tile, thin shelled or misshapen eggs) and mix crumbly, but not sloppy, with sweet milk, adding a little chick size grit, giving it five times daily. Over this, the second day, sprinkle chick feed. The first three days keep chicks near the hover, pushing them back under it after each meal until they are used to it. The fourth day stop the nursery food, feeding scratch feed, throwing It in the clover, and start green food, though sparingly, and avoid sour or frozen feed or musty grain, for they are certain death. After the sixth day begin feeding meat scraps In small quantities, an ounce fed twice daily In feed hoppers. The following successful method of feed ing is excellent: Over the cut clover spread ten pounds of chick feed, cov ering with two more Inches of clover and ten' pounds more of feed, and so on, until there are eight Inches of Ut ter and sixty pounds ot feed. This, with meat scraps and green food, lasts about five weeks, and reared in this way chicks will prove sturdy, healthy and possess great vitality. ELECTRICAL COOKER IS NEW WORK OF BEES IN ORCHARDS It Has Been Proved That Little Honey Gatherers Are Responsible for Cross-Pollenatlon. It has been a matter of doubt until recently as to Just what agencies were responsible for cross-pollenatlon in ap ple orchards. It was thought that the wind was a factor as well as the honey bees and other Insects. It has been proved, however, that the wind has very little to do In aiding cross-pollenatlon, and that honey bees, wild bees and other insects are very necessary for the transference of pollen. To determine the importance of the honey bee and other insects as factors in cross-pollenatlon, an experiment was carried on by the Kansas experi ment station under the direction of James W. McCulloch, assistant en tomologist. Wind was not considered in the test, because It was found that wherever apples were grown far from an apiary only a small amount of fruit was grown. It was found that tame bees were the predominating Insects visiting the flowers. They viBlted the trees from early morning until sundown. Cloudy or windy weather seemed to reduce their number and they did not begin flying until after the dew bad left the trees. This cooker Is cyl indrical in form, with several cooking compartments arranged one above the other. In the lower part of the cooker is a flexible pressure plate above a basin of water. The current being turned on vaporizes the water as the heat Increases until a certain pressure is reached; this automatically opens the circuit, thus shutting off the cur rent Since the walls of the cooker are made of a non-conducting material the cooking continues under the fire- less principle. When the cooling has reached a certain point condensation has reduced the pressure and the cur rent is in use only part of the time; this gives an economical use of elec tricity. Although the United States contains but five per cent, of the population ot the globe, it has 69 per cent, of all the telephones in the world and 65 per cent, of the telephone mileage. In New York city alone there are 500,000 telephones more than twice the quota of London. Berlin has but 210,000, and Paris only 92,000. The whole of Germany has but one-seventh the number of telephone stations operating In the United States. In 1912 there were made In the whole world 19,000,000,000 telephone calls, to which number the United States alone contributed 12,229,000,000. FOR SUNDAY EVENING APPETIZING HOT DISHES TO 8ERVE AT SUPPER. Good Thing About Them Is That Their Preparation Will Not Com pel Mother to Stay In Kitchen 1 All the Afternoon. At this time ot year a hot dish at the Sunday supper table is always welcomed, especially if it happens to be a bit unusual. There are a num ber of dainty, savory dishes that can be easily and quickly prepared. These are the kind that will appeal to the mother, who will certainly not wish to spend the afternoon in the kitchen, however much she may have the wel fare of the family at heart Some of the dishes can be prepared beforehand and can be cooked or re heated in the time It takes to set the1 table. Take, for instance: Baked Sausages When preparing the potatoes for dinner cook an extra quantity. Mash smoothly and mix in a little well beaten egg. Butter indi vidual pans and fill with the potato, brushing over with milk or beaten egg. Buy the very small sausages and, cut ting apart, boil tor five minutes. Join' the ends with a wooden toothpick be-' fore putting into the water. Form a ring of the potato and lay the sausage upon it then put into the oven and bake until the top is brown. Pin a little dolly around each dish and serve on a plate garnished with a sprig of parsley. Chicken Rolls These can be pre pared the day before if, when cold. they are wrapped In wet paper to keep them moist. Supposing there is any. chicken left over, It may be augment ed by a couple of slices of cooked ham bought at the delicatessen. Chop ham and chicken fine and mix together with a white sauce, a dash of red pep per and minced parsley to taste. Roll out a fairly rich pie crust very thin, cut into squares and lay a spoonful of the mixture upon each. Form into rolls or turn over three-cornered fash ion and brush with a well beaten egg. Bake in a hot oven until nice and brown. A few minutes will sufiBce for reheating when wanted for the table. Serve on a folded napkin and garnish with parsley. Fresh, criBp watercress is nice with either dish suggested. Sweetbreads With MuBhrooms Mushrooms are moderate in price Just now, and combined with sweetbreads make a delicious dish. When the lat ter comes from the butcher soak in cold water for two hours then cook for five minutes in boiling water. Drop from this Into cold again and re move the fibers. Cut Into pieces and fry in butter with about equal quanti ties of mushrooms, or as many as de sired. When nicely browned blend a little butter and flour and make into a white sauce with a cup of thin cream. ' Delight Pudding. Mix one pint of bread crumbs with half cup of softened butter. Beat the yolks of two eggs, add one cup of milk and halt cup of molasses. Sift together half cup of flour, half tea spoon each of Boda, salt, mace and cloves and one teaspoon cinnamon, then mix these through a cup of seed ed raisins cut in halves (Sultana raisins need no cutting). Add the flour, condiments and raisins to the buttered crumbs and mix the whole, to a dough with the liquid mixture. Steam in a two-quart mold (lined with paper, if plain) thoroughly buttered. Serve hot with sauce. Cream one-halt cup butter. Gradually beat in one cup sugar, then the whites of two eggs beaten stiff. Flavor with vanilla, mace or brandy. English Plain Cake. One cup of butter creamed, two cups of sugar, four eggs beaten light, one cup milk, four cups flour sifted with one-half teaspoon salt one even tea spoon baking soda, two teaspoons of cream of tartar, one cup currants, one cup raisins, one cup oandled orange and lemon peel sliced fine. This makes two loaves. Cook In bread tins two hours in a rather slow oven. This keeps two months or more and should be wrapped In waxed paper and kept in a stone crock. Use any pre ferred flavoring. , Baked Apple Sauce. Apple sauce made In this manner otters a variation ot the many apple desserts. Pare, core and slice six ap ples. Fill a sauce pan one-third full of cold water, add the apples one-half cup sugar, one teaspoon lemon juice, a little grated orange peel and one stick cinnamon. Place on a low shelf in a slow oven, allow to remain until thoroughly soft but do not let apples bake. Set aside until cool and serve with whipped cream sprinkled with chopped nuts. Spinach 8alad. Wash spinach in several waters. It young and tender, heat gently and cook In its own Juice for twenty or twenty-flve minutes. If older boil un covered until tender, using one quart of salted water for each peck of spin ach. When done drain, chop and mari nate in French dressing. When cold serve with rings ot hard boiled eggs and lemon points. . Fruit Ginger Bread. For this mix two pounds ot flour, three-quarters of a pound of butter, one pound ot sugar, one pound of seeded raisins, chopped, one pound of currants, two cupfuls ot molasses, one-halt cupful ot sour cream, halt a dozen eggs, a heaping teaspoonful ot cinnamon. Stir together well, putting in the fruit last having dredged it with flour. Beat and bake in shallow pans. Grease Stains. Sometimes It is not possible to wast out grease spots. In such case, try this method: Put blotting paper under the spots and another piece over them; then iron with a fairly hot iron. Sponge afterward with alcohol of chloroform. Beef Broth With Egg.
