Cook sugar, white syrup, wattr
and salt to the hard ball stage or

a Dover beater. Pour the hot syrup
over the beaten egg white, beating
constantly until candy will hold
shape. Add vanilla,
sliced dates
and chopped nuts and mix thor­
oughly. Turn out on molding boatd.
Shape into long cylinders and roll
in chopped tcasted cocoanut.
COCOANUT TOFFEE
(Both Hard and Chewy!)
1 cup sugar
% cup thin cream
cup white corn syrup
1/16 teasp. salt
1 Ik tbsp. butter
Vk teasp. vanilla
2 pkg. chopped toasted cocoanut
Cook sugar, syrup, cream an.l
salt, stirring until the
sugar is
dissolved.
Continue cooking
until
the temperature “ 44° F. is reached.
Add the 'butter {.ml continue cook­
ing until 260° F. It will be necess­
ary to stir this candy quite often
as it
scorches easily. Sprinkle a
thick layer of chopped, toasted co­
coanut on an inverted pan or bak­
ing sheet. Pour the candy on the
cocoanut. Sprinkle the top with
cocoanut. When cold, break into
pieces. 1 lb.
